It’s got all the layers- yogurt, potato, onions, chutneys, bhujiya- the only thing it doesn’t have is papdi which is the chips for this dip. Using this recipe you can serve papdi chaat for any party or get-together and not worry about it becoming soggy for a few hours which is a game changer!! Make them in small individual cups or a big bowl as you want! I had this dip out for 10+ hours and it was perfect throughout, everyone kept nibbling on it throughout. You need to serve it this way and just wow everyone!
Baked Shahi Tukda Diya
Baked Shahi Tudka diyas are a delicious healthier spin to Shahi tukda that is a perfect Diwali Indian dessert. Traditionally, Shahi tukda is a rich Mughlai dessert made with ghee-fried bread slices that is soaked in sugar syrup, topped with rabdi and garnished with nuts. In this version, the bread is shaped to form a diya and baked. An almond slice helps to form the flame and it’s filled with a homemade delicious Rabri. Malai rigatoni is a creamy tomato-based flavorful pasta with an Indian touch. It’s so easy to make and gives such a creamy sauce with spices to balance it perfectly! This idea is inspired by a restaurant in Los Angeles Pijja Palace which has a similar dish. Though I’ve not tried it this is my version of how I would make a dish fit for the name Malai Rigatoni. And I have the cutest story behind this dish- when I tested it and made it for friends, my friend’s daughter who is 1.5 years old could not stop eating this! So it is adult and child-approved. (when making for kids, use broth instead of vodka)! You can taste the malai flavor with an earthiness from the spices and then the tomatoes bringing it all together.

Paneer vegetable Biryani is a delicious layered aromatic rice dish. It’s layered with par cooked rice, spiced vegetable mixture with paneer and potatoes, saffron milk, fried onions, and herbs. This dish is widely popular in south Asian countries and there’s a big argument that vegetarian biryanis should just be called pulao (another rice dish). I disagree (but that’s a conversation that can go on) and once you try this you’ll be swayed to disagree at well. Chole Bhature is a beloved dish from North India that makes a delicious meal. Spiced chickpeas (chole) served with a deep fried bread (bhature) this dish is just chefs kiss. There are many different ways this dish can be made, Thai method is my favorite. This recipe is my grandmothers recipe and I whenever I visit her home I ask her to make this for me. It’s a dry chole sabzi with a soft and flaky bhature. She usse minimal ingredients to make it but it comes out SO GOOD and all the flavors are on point! The layers are a delicious samosa filling wrapped in spinach which is wrapped in a pea paté layer (Made like a matar kachori filling) all wrapped in puff pastry. It is an explosion of flavors and so easy to make, unlike a classic meat wellington which is more technical to make and cook. Definitely a must make for special occasions. It’s great as a part for meals or even snack time! A perfect balance of spices and earthy flavors and just looks so fancy with all the stunning layers.

Gulab jamun and rabri together are one of my favorite combinations so I wanted to create a fun recipe using them, fit for the festive season. This tiramisu has layers of soaked ladyfingers, a rabri cream mixture, gulab jamuns, and crushed pistachio. I have kept the essence of tiramisu by keeping the coffee-soaked ladyfingers and mascarpone cheese in this recipe, but I added gulab jamuns and rabri for the twist. The gulab jamuns are sliced and used as a layer and the rabri is added to the mascarpone cream. All together all the flavors work so well together. Make this ahead of time for your Diwali party and not only will everyone love it but it saves time on that day too. The rose petals and pistachio give it a stunning look as well.

Being born & brought up in Kolkata, West Bengal this is very close to my heart and I love having it especially after a Bengali meal. This Mishti doi cheesecake is the perfect fusion of the two places in the world i have spent the most time in- Kolkata and New York. It has the texture of a cheesecake with the flavors of mishti doi. It is eggless and i made it in an Instant pot but can be made in an oven as well. It is delicious- sweet, light with a slight tangy taste and the buttery crust to balance it all. Chaat should be another food group because it’s amazing and who doesn’t love samosa chaat, firstly it’s chaat and then it involves samosas!! Samosa chaat dip is a deconstructed chaat in a way and a delicious and unique way to serve it. It’s got all the layers- chole, yogurt, onions, chutneys, bhujiya- the only thing it doesn’t have is the samosa which is what you scoop this dip with. Oh, also the samosas are smashed to make it easier to scoop. Using this recipe you can serve samosa chaat for any party or get-together and not worry about it becoming soggy for a few hours which is a game changer!! Make them in small shallow individual cups or in a big shallow bowl as you want! I had this dip out for 10+ hours and it was perfect throughout, everyone kept nibbling on it throughout. You can scoop the smashed samosas in directly or serve it with small spoons to scoop it onto the samosa. You need to serve it this way and just wow everyone! You get all the flavors of samosa chaat without any sogginess! You know as the inventor of chaat dips, I'm not going to stop at just two.

Burrata Paneer Makhani Tart
Introducing you to this absolute treat which is the best of both worlds! A flaky puff pastry filled with paneer in a creamy makhani gravy topped with creamy burrata cheese. 'Bhakarwadi’ is a traditional sweet and spicy snack, popular in Maharashtra, Gujarat and Rajasthan, India. It is made with a variety of fillings and resembles a pinwheel. This is a family recipe with a yummy filling of potato, carrots and coconuts and is Vegan. The altering layers of the crispy dough and potato makes it a perfect snack! They can be airfired or fried, I air fry mine and i prefer it so much more than fried. Malai paneer is a delicious rich paneer recipe in a creamy white gravy. The gravy is made with onions, cashews, whole spices, milk, and cream. The khoya/mawa adds a delicious malai and creamy flavor. I don’t use any spice powders in this recipe because that helps keep the white malai color in the gravy! All the spices, onions, chili, and cashews add so much flavor that no spice powders are needed. Pair it with your favorite bread like naans or paratha and it's such a treat! Dal Makhani is an absolute treat, made with black lentils cooked with spiced, tomatoes and cream & butter. It is one of the most beloved dishes from North India and is known worldwide! This is my version of making this delectable dish at home that will transport you to any restaurant or dhaba in India.
The success to this dish is the mix of spices and slow cooking and adding the fat in intervals. I cook it for 6-8 hours so the instant pot is perfect for making it because i leave it to slow cook overnight- trust me when i say this, it is just amazinggggg. You can definitely make it without an instant pot but just be careful with the low flame and you’ll need to stir in intervals so that it does not burn or stick. This recipe is a favorite for anyone who has it be it friends, family. Just keep patience and let it cook (YES i know its too tempting) but the end result is SO worth it!

Paneer Tikka is such an essential part of North Indian food and for good reason, it is delicious! Paneer marinated in the most delicious spice mixture with so much flavor. The marinade when cooks forms a coating on the paneer. You will find a lot of paneer tikka recipes but this one is so different, you need to try it for yourself. This recipe is a no brainer because there is no one i’ve met who doesn’t like paneer tikka! You can meal prep it from before and keep which makes life easier and the paneer tastier!! Yes you need patience for the paneer to marinate but its so worth the wait. Freezing the paneer is a great hack while cooking the paneer tikka. Thandai bombs is a delicious Indian twist to the chocolate bombs which is great for get togethers and festivals, especially Holi. Thandai is an Indian drink prepared with a mixture of almonds, fennel seeds, watermelon kernels, rose petals, pepper, poppy seeds, cardamom, saffron, milk and sugar. Drop these bombs in hot milk and you will get milk which is filled with chopped nuts and a delicious spice flavor and then top it over ice. This is such a unique dish and it is so delicious! My mother helped me come up with this it was so much fun planning this first of a kind dish together long distance. When i first made this my husband and I finished the entire bowl in one day! The flavors just work so well together and it’s going to surprise everyone so you need to try this! It is also gluten-free!

These home style cheese balls is a family recipe that I have been having since i can remember. They are delicious and very easy to make with minimal ingredients- 5-6 only. These cheese balls are crispy on the outside and so cheesy and melty on the inside. This is a must make recipe for anyone who loves cheese so if that’s you, you will love it. An indulgent recipe but one that is so worth it!
Tiranga Stuffed Shells
Tiranga stuffed shells are an Indian twist to the classic spinach ricotta stuffed shells and it’s so yummy! This recipe is very special to me because I specially created it for India’s Independence day to represent the Tiranga (Tricolor flag of India). The base is a spinach sauce topped with shells filled with creamy paneer topped with a delicious red sauce and then baked to perfection. This has all the elements of the classic stuffed shell recipe like spinach, red sauce, and ricotta. The paneer filling is such that its consistency is close to ricotta. With all the flavors together this is a must-try. It will be a hit at any party or family dinner, it’s so comforting!

Focaccia is one of my favorite bread because of its chewy & soft texture. I first learned how to make it when I was in Pastry school. During the 2020 lockdown, I rekindled my love for this bread and I’ve been making it a lot ever since. I wanted to give it a never before tried Desi twist. I added some spices and flavorings to the dough as well as topped it with spice-marinated toppings like paneer, potatoes, and more. As it’s baked at a very high temperature, it gives it a tandoori effect on top and it’s so yum! It’s a must-try!
Burrata tikka masala Fondue
Burrata Tikka masala Fondue is a delicious fusion of flavors giving you a creamy texture and a spicy kick. The earthy flavors of tikka masala with a cheesy burrata cut into it with all the melted goodness. It is amazing with all kinds of sides like roasted vegetables and all the kinds of breads you want! My favorite vegetables are roasted potatoes and paneer. My favorite breads and sides are chilli naan, malaysian paratha, papad and mini samosas! It is such a fun interactive dish to serve and enjoy with friends and family. It is even perfect for Valentines day! It’s really so much fun picking up all the melted cheese strands soaked in tikka masala.

Matar paneer (cottage cheese with peas) phyllo cups is a delicious bite size appetizer. A matar paneer (not too much gravy) filled in a crispy phyllo shell. It works so well together I was like why didn’t I think of this before! The paneer is slightly creamy and spicy and pairs well with the phyllo. These are great for parties, get togethers or on a charcuterie/cheese board. These appetizers were wiped clean in 5 mins. I’m not kidding I made 40 of these and it was over in 5 mins between 6 people. These vegetarian Indian fusion appetizers are perfect for Diwali and the festive season.
Kesar Badam milk Bombs (Golden milk bombs)
Kesar Badam milk bombs is a delicious healthy Indian twist to the chocolate bombs which is great for immunity. Drop these bombs in hot milk and you will get milk which is filled with chopped nuts and a delicious saffron flavor with all the nutritional value of turmeric. These bombs will give you a better version of haldi badam doodh (golden milk). It is a fun way to make your children have this nutritious drink and even more fun to make it. Club Kachori with Aloo Sabzi
Growing up in Kolkata, one day in the winters definitely meant kachori sabzi for breakfast! It’s perfection in the crisp winter morning. A spiced besan (chickpea powder) filled soft Kachori with the most delicious aloo (potato) sabzi. They are just a match made in heaven. And served with some jalebis on the side Im in heaven. This is a very popular breakfast/ brunch back in Kolkata that many roadside vendors sold. In winters there is a long line waiting for it also.

Banana pudding is one of my recent favorite desserts so I had to put an Indian twist to it. I added saffron and cardamom to the cream & it just took it to the next level. The flavors just marinate so well together that you are going to love this version. I used Parle-g to make it instead of regular vanilla cookies and that was just delicious. This pudding is so so easy to make you just need patience to not gobble it up and give it time to chill. It is soft and creamy & just melts in your mouth. This recipe is inspired by the recipe of Magnolia Bakery with an Indian twist. It is eggless and everyone loves it! You can make it in a large bowl or as individual servings and is great to make with friends and family, especially during the festive season.

Growing up in Kolkata, the aloo dum is a very treasured dish for me. The way it is made in this city is very different from the rest of India & it is so delicious I urge you to try this. The mustard oil gives it a beautiful fragrance and the spices just take it to the next level. This dish is commonly had with luchi (a puffed bread) but you can have it with paratha, naan or even regular bread. It is delicious just as it is and is a great appetizer as well.
