Bombay Sandwich Sliders

Bombay Sandwich is a very popular street food from India that is loved all over the world. This slider is a delicious recipe using the components of a Bombay sandwich but as a slider!! They are layered with so many veggies, cheese (Amul), and the most flavorful cilantro-mint chutney and baked in the oven. A delicious Desi snack that is just perfect for game nights or parties. Trust me when I say this- You CANNOT just have one. The chutney and bhujiya on top adds that crunch and burst of flavor in every which makes it too good. It is just an explosion of flavors, textures, and melted cheese! Also, it’s pull-apart so that makes it more fun!

Ingredients: 

Sandwich Chutney:

  • 1 bunch of coriander with stems, roots removed

  • 1/2 cup mint leaves

  • 2 tbsp raw peanuts

  • 1 inch ginger

  • 3 clove garlic

  • 1/2 tsp cumin powder

  • 1/2 tsp chaat masala

  • 1.5-2 tbsp lemon juice

  • 1 tbsp sugar

  • 1/4 tsp salt

  • 1/4 tsp black salt

  • 3 green chili

  • 3-4 ice cubes

Assembly:

  • 1 pack of 12 savory Butter rolls

  • 1.5 tbsp Mayonnaise

  • 1.5 tbsp Ketchup/Maggi masala sauce

  • 1.5 medium-sized golden Potato thinly sliced in circles- peeled and not boiled- check notes

  • 3/4th medium-sized red Onion thinly sliced in circles

  • 1 tomato cut into thin slices

  • About 1/3 cucumber cut into thin slices

  • 1/2 green Bell pepper thinly sliced in semi-circles

  • 4-7 Amul cheese slices

  • 1/2 stick (50g) melted unsalted Butter

  • 1 tsp garlic powder

  • 1 tbsp Brown sugar

  • 1.5-2 tbsp Chaat masala

  • 1/2 tsp red chili flakes

  • 1/2 tbsp Black cumin seeds/Kalonji

  • 1/2 tbsp sesame seeds

  • About 1/4 cup Sev/Bhujiya/Lemon bhujiya

Directions: 

  1. Sandwich Chutney: Add all the ingredients in a blender and blend till smooth. Keep aside.

  2. Preheat the oven to 375F.

  3. Slice the entire butter bun in half horizontally without pulling them apart. Separate 6 of them and start working on those first.

  4. Mix melted butter, brown sugar, garlic powder,1 tsp chaat masala, red chili flakes, kalonji, sesame seeds, and 1 tsp chutney. Keep aside.

  5. Mix mayonnaise and Maggi sauce. Keep it aside.

  6. Start assembling on parchment paper or a silicone baking mat.

  7. Spread a generous amount of chutney on the bottom base of the bread.

  8. Layer cheese slices on the bottom layer.

  9. Sprinkle chaat masala over it. Sprinkle some chaat masala after every layer of veggie/cheese/chutney!

  10. Layer the tomatoes and cucumbers over the cheese slices.

  11. Top with another layer of cheese slices- Optional

  12. On another 6 sliced pieces of bread (not the set you weren’t working on) spread a thin layer of the mayo sauce mix.

  13. Layer the thin slices of bell pepper, onions and then potato slices on the bread.

  14. On the top layers of bread, spread a generous layer of chutney.

  15. Sandwich the bread together.

  16. You should have 6 pieces of bread left. Use those to make two more sliders. Stick it close to the sliders on the baking tray. You can assemble it alongside or at the end whatever is easy for you.

  17. Using a toothpick to poke holes in the top of the bread rolls- VERY important. Spread the butter mixture over the rolls. (If it falls over spread it back on top and sides).

  18. Cover with foil and bake for 15 mins at 375F. Reduce the temp to 350F and bake it for 15-20 mins.

  19. Once out of the oven, spread more chutney over the top of the bread.

  20. Sprinkle some bhujiya/sev on top followed by chaat masala.

  21. Pull them apart and enjoy them warm!

Notes/Tips:

  • Use savory butter rolls. It will be too sweet if you use sweet butter rolls. I used savory Hawaiian king rolls.

  • Ideally use European butter like Kerrygold

  • If you like spicy food, make the chutney spicier.

  • If you do not have brown sugar, use white sugar but brown sugar works better.

  • Covering with foil and temperature change in the oven is a must.

  • Make sure the potatoes are sliced thin so that they cook in the oven. You should be able to see through the potato slice.

  • You can use any cheese slices you want, I like using Amul for the more authentic flavor.

  • Use any cilantro chutney you want, I recommend using the cilantro mint for better flavor.

  • Make sure you make enough holes because you want the sauce to soak through.

  • Sprinkle some chaat masala after every layer of veggie/cheese/chutney!
