Rasgulla Pudding

Servings: 8-10 people. I used a 34oz bowl

Prep Time: 20 minutes

Chilling Time: 4 hours+

Total Time: 5-6 hours; overnight




Ingredients: 

  • 2lb/1 tin rasgullas

  • 150 gm plain digestive biscuit (I always use - Marie gold biscuit for this recipe, available in all Indian grocery stores)

  • 3lb/48 fl oz softened vanilla ice-cream 

  • 4-6 tbsp grated semi-sweet/milk chocolate

  • 3-4 mangoes chopped (optional if out of season)

Directions: 

  1. Let the ice cream sit in the fridge/outside to soften. 

  2. In a wide bowl, fill some water. Squeeze the syrup of the rasgullas out in it’s container and put the squeezed out rasgulla in the bowl with water.

  3. Let the rasgulla sit in the water for 1-2 mins and then squeeze it out and transfer them to the bowl. Make sure you squeeze the water out well.

  4. Crumble them and form the 1st layer. Press down lightly.

  5. Crush biscuits in a ziplock bag or food processor. I like to keep it almost fine with some bigger pieces.

  6. Place the crushed biscuits on top of the rasgullas as the 2nd layer. Evenly spread it out.

  7. Put the softened ice cream to the brim of the dish to form the 3rd layer.

  8. Let it freeze for an hour.

  9. Sprinkle the grated chocolate on top of the ice cream.

  10. Place the chopped mangoes on top of the chocolate.

  11. Let it chill in the fridge for at least 4-5 hours before serving. Ideally, let it set overnight.

  12. Serve cold in smaller bowls.

Notes/Tips:

  • Softened ice cream makes it very easy to get an even layer.

  • The rasgullas should be drained well.

  • Even graham crackers wor if you cant get digestive biscuits.

  • It needs time to set and soak in the flavors so make sure to let it chill for at least 4-5 hours. It tastes best if you let it sit overnight.

  • If it gets dry, add more vanilla ice cream before serving.
