Mango Mania: How to Make the Perfect Mango Float Recipe

Servings: 8-10 people. I used a 34oz bowl

Prep Time: 20 minutes

Chilling Time: 4-5 hours+

Total Time: 6-8 hours; overnight

Ingredients: 

  • 3.5-4 cups heavy whipping cream 

  • 12 oz of condensed milk

  • 12-14 oz of graham crackers or digestive biscuits

  • 6-8 ripe mangoes; I used Indian Kesar mangoes

Directions: 

  1. Cut about 4 mangoes into small cubes and about 2-3 mangoes into thin slices and keep aside.

  2. In a stand mixer, or using an electric whisk or immersion blender start whipping the heavy cream. Whip till it thickens and medium peaks form. Do not overwhip the cream. Add the condensed milk and mix till combined.

  3. In a dish spread a thin layer of the cream mixture as the base.

  4. Spread a layer of the graham crackers and then spread a 1/3rd of the remaining cream as a layer. Top it with half of the chopped mangoes. Repeat these layers a second time.

  5. After the second mango layer top with a layer of graham crackers and the remaining cream.

  6. Use the sliced mangoes top and decorate it while covering it completely.

  7. Cover it with a cling wrap and let it set in the fridge for at least 5-7 hours. I like to set it overnight.

  8. Cut and serve and enjoy!

Notes/Tips:

  • Ideally, set the dessert overnight.

  • If you can’t find graham crackers use any digestive biscuits. You could even use parle g but I recommend something like Marie gold digestive biscuits over it

  • Make sure you don’t over-whip the cream you want it smooth.
