One pot Veggie Mexican Orzo

One pot Veggie Mexican orzo is a delicious one pot recipes that’s going to satisfy your Mexican cravings! I love using orzo I this recipe because of its texture and how it soaks up all the flavors. You can use all the vegetables you like making it packed with nutrients. Its creamy with a kick of spice and so much flavor you need to try it to believe it! Adding beans to it helps adding protein to the dish. Topped with melted cheese this recipe is a must try! You can use small pasta like macaroni or rice if you want instead of orzo. You need to try this as your weekday meal and see for yourself!

Ingredients: 

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 small onion finely chopped

  • 5-7 cloves of garlic

  • 2 tsp ginger paste

  • 1/2 bell pepper finely chopped

  • 3-4 mushrooms

  • 1 jalapeño finely chopped

  • 1/3 cup carrots chopped

  • 1/2 cup broccoli florrets

  • 2 tbsp tomato paste 

  • 1 tbsp coriander chutney

  • 1 tbsp hot sauce of your choice

  • 2.5 tbsp salsa

  • 1/2 cup black beans

  • 2 tbsp chopped coriander 

  • 2 tbsp chopped parsley

  • 2 scallions finely chopped

  • 1/3 cup corn

  • 1-1.5 tsp Salt as per taste

  • 1/4 tsp Pepper

  • 1/8 tsp Sugar 

  • 1 tsp Chili flakes as per taste

  • 1 tsp Cumin powder 

  • 3/4 cup milk 

  • 2.5 cups Stock 

  • 1.5 cups Orzo

  • 2.5 tbsp sour cream

  • 1-1.5 cups Mexican cheese

Directions: 

  1. In a pan on low-medium heat, add oil and butter.

  2. Once warm, add onions and cook for 3-4 mins till it starts to soften.

  3. Add garlic and ginger paste and cook for 3 mins till fragrant.

  4. Add peppers, jalapeños and mushrooms and cook for 2-3 mins.

  5. Add tomato paste, coriander chutney, hot sauce and salsa and cook for 3-4 mins.

  6. Add scallions, corn, chopped parsley and cilantro, black beans and refried beans and mix it together.

  7. Add orzo and cook for 1-2 mins.

  8. Add stock and milk and mix. Let it come to a low simmer.

  9. Bring the heat on low and stir. Cover the lid and let it cook for 8-10 mins, stirring it a few times to ensure it doesn’t stick to the base.

  10. Take the lid off and stir well. Add sour cream and mix.

  11. Top with cheese and cover the lid. Let it cook for 2-3 mins till the cheese melts.

  12. Garnish with scallion green, fried onions and red chili flakes as you wish.

  13. Serve immediately and enjoy!

Notes/Tips:

  • You can use small pasta like macaroni or rice instead of orzo.

  • Be sure to stir it when covered so that it doesn’t stick to the base and cooks evenly.

  • Add as many vegetables as you like.

  • If you don’t have refried beans you can skip it but it adds so much flavor.

  • You do not need to rinse the orzo before adding it.

  • You can skip the sour cream for greek yogurt.
