Mixed sauce Cajun Pasta

So you already know, I love pasta so you’ll keep getting recipes from my experiments. This mixed sauce Cajun pasta is one of the best experiments till date! The cajun seasoning compliments the feta SO well. The creaminess is from the tomato paste and cream cheese which is a match made in heaven. Corn and spinach are the perfect addition to this pasta. This pasta recipe is so delicious and it makes a perfect meal any day of the week. All the flavors are so good and honestly I drooled a little writing about it. It’s perfectly saucy and without any overpowering flavors so this a must try!

Servings: 8-10 servings

Prep Time: 10-15 mins

Cooking Time: 20-25 mins

Total Time: 30-40 mins

Ingredients: 

  • 10-12 oz pasta of your choice

  • 1 tbsp butter

  • 1/2 tbsp olive oil

  • 1/2 cup yellow onions finely chopped

  • 4-5 cloves garlic thinly sliced

  • 2 tbsp chopped jalapeños 

  • 1.5 tbsp Cajun seasoning

  • 1/2 tsp chili flakes

  • Salt to taste

  • 1/4 tsp Pepper

  • 1/4 tsp Sugar 

  • 1/2 cup golden corn kernels

  • 3-4 tbsp tomato paste 

  • 6-8 oz baby Spinach 

  • 3-4 tbsp cream cheese

  • 1/3 cup milk

  • 3 tbsp heavy/light cream 

  • 1 cup Pasta water 

  • 3-4 tbsp feta; divided

  • 3 tbsp mozzarella cheese 

  • 2 tbsp Parsley 

Directions: 

  1. Put water to boil in a saucepan with salt. Boil pasta of your choice till al dente. Keep aside and reserve pasta water.

  2. In a saute pan on medium heat, add butter and olive oil.

  3. Add sliced garlic, onions and jalapeños and cook for 6-8 mins till the onions start to brown and caramelise.

  4. Add Cajun seasoning, salt, pepper and sugar and cook for 1-2 mins.

  5. Add corn and toss it together.

  6. Add tomato paste and cook for 4-5 mins.

  7. Add spinach and cook till it wilts.

  8. Add cream cheese, milk, cream, pasta water and mix till its a smooth mixture and the cream cheese melts.

  9. Add boiled pasta and toss it together coating it well.

  10. Add 2.5-3 tbsp feta cheese and mozzarella cheese and mix till melted.

  11. Top with chopped parsley and cook for 2-3 mins till it comes together.

  12. Top with remaining feta and serve warm.

Notes/Tips:

  • I would recommend using a pasta like rigatoni, penne, etc.

  • Don’t skip the feta, it adds SO much to this dish,.

  • You can use kale if you want instead of spinach.

  • Cream cheese adds a lot of body to the dish as well as creaminess so don’t skip that!
