Maggi Manchow Soup

Ingredients: 

  • 2-3 Maggi packets

  • 2 -3 green chilis finely chopped

  • 1/2 small red onion finely chopped

  • 1/4 cup carrots finely chopped

  • 1/4 cup green beans finely chopped

  • 1/2 bell pepper finely chopped

  • 1 tbsp celery finely chopped

  • 1 tbsp sesame oil

  • 1-inch ginger grated

  • 2-3 cloves of garlic grated

  • Salt as per taste

  • 1/4 tsp pepper

  • Maggi masala packet

  • 1 tsp chili flakes

  • 1/2-1 tsp sugar

  • A pinch of ajinomoto; optional

  • 3-5 cups of water

  • 1 tbsp dark soy sauce

  • 1/2 tbsp soy sauce

  • 1 tsp chili vinegar

  • 1/2 tbsp sriracha

  • 1/2 tbsp sweet chili sauce; optional

  • 1 bouillon cube

  • 1-1.5 tbsp cornstarch

  • 2 tbsp coriander leaves chopped

  • Sesame seeds to garnish


    Directions: 

  1. In a saucepan on medium heat, add sesame oil.

  2. Once warm, add grated garlic, ginger, and chopped chilis. Saute for 2-3 mins till it’s fragrant and starts to brown.

  3. Add chopped onions, carrots, and beans and saute for 1-2 mins.

  4. Add the chopped peppers and celery and saute for about 1 minute.

  5. Add salt, pepper, sugar, chili flakes, Ajinomoto, and Maggi masala, and mix it.

  6. Add water, soy sauces, sriracha, sweet chili sauce, and vinegar and mix. Increase the heat to medium-high and let it come to a boil, stirring in between.

  7. Once it starts coming to a boil, add the maggi noodles and bouillon cube. Give it a stir, ensuring the maggi noodles are submerged under water.

  8. Stir in intervals till the maggi noodles are almost cooked. It takes about 1-2 mins.

  9. Mix together cornstarch with 2-3 tbsp water and then add it to the boiling maggi along with chopped coriander leaves.

  10. Mix it together well and let it boil for 1-2 mins till it thickens slightly.

  11. Serve hot with a garnish of sesame seeds and coriander leaves. You can top it with fried noodle/wonton strips if you want.

Notes/Tips:

  • Don’t overboil the soup after adding the Maggi it can make the noodles too melty.

  • You can add more veggies like chopped cabbage, corn, etc.

  • If you want to prep it from before, make everything till you add the noodles. Boil and then follow the steps and so the noodles don’t overcook.

  • You can make it spicier by adding green chili paste instead of chopped chilis.
