Onion Cheese Puff Roll Ups

Ingredients: 

  • 3 leeks chopped

  • 1 large yellow onion cut into thin slices

  • 1.5 tbsp olive oil

  • 1 garlic clove confit or 2 cloves minced

  • 1 tsp salt as per taste

  • 1/4 tsp pepper

  • 1 tsp chili flakes as per taste

  • 1/4 tsp sugar

  • 1.5 tbsp water

  • 1/2 tbsp balsamic vinegar

  • 1 tsp maple syrup

  • 1 puff pastry sheet, about 9 oz; thawed

  • 3.5-4 oz crumbled blue cheese

Directions: 

  1. Cut the leaves and clean them in a bowl of water. Rinse them and drain well.

  2. Put a pan on low-medium heat. Add olive oil and let it heat up.

  3. Add sliced onions and drained leeks and cook on low-medium heat for 4-7 mins till they are translucent.

  4. Add salt, pepper & chili flakes along with garlic and cook for 5-7 mins till they start to brown.

  5. Add sugar, water, maple syrup, and balsamic vinegar, and mix well. Cook for 3-4 mins. Once the liquid mostly evaporates and the mixture comes together, turn off the heat and let it cool.

  6. Preheat the oven to 400F. Line a baking tray with parchment paper.

  7. Roll out a thawed puff pastry sheet.

  8. Spread the cooled onion-leek mixture on the puff pastry leaving about half an inch around the edges.

  9. Top the onion layer generously with blue cheese crumbles.

  10. From the long side, start rolling the puff pastry tightly over itself into a log.

  11. Using a sharp knife or pizza roller cut the log into pieces, about an inch wide.

  12. Place each piece onto the baking tray. Top each piece with more blue cheese crumbles.

  13. Bake at 400F for 13-17 mins till golden brown and the cheese melts.

  14. Serve warm with a sweet & spicy sauce.

Notes/Tips:

  • Cleaning Leeks: Remove the outer dried leaves if there are any. Slice leeks and put them in a large bowl filled with water. Gently give them a good shake in the water. Let them sit for 2-4 mins and drain them in a colander. Rinse with water again and let it dry and use. Click here for a short video.

  • Make sure to cook leeks and onions well.

  • A strong chees like blue cheese pairs well with this recipe. You can use brie instead of blue cheese if you like.
