Eggless Chocolate Orange Brownies

Servings: 10-15 brownies

Ingredients: 

  • 150g butter

  • 150g chocolate in small pieces; ideally use good-quality chocolate

  • 40g cocoa powder

  • 70g light brown sugar

  • 160g castor sugar/ finely granulated white sugar

  • 1 tsp Salt 

  • 1/2 tsp Baking powder

  • 170g all-purpose flour/maida; sifted

  • 100g milk

  • 30g yogurt

  • 28g orange juice

  • Zest one orange

  • Orange chocolate of your choice

Directions: 

  1. Preheat oven to 340F. Prepare a baking tray by greasing it and placing a parchment on it. I used a 12*8 pan.

  2. Brown butter- Put a pan on low-mid heat and add butter. Stir frequently and cook till the milk solids caramelize and brown. The butter should be a darker color and have a nutty smell. Make sure you take it off before it burns. It can take 10-12 minutes.

  3. While the butter is browning, add the castor and brown sugar to a grinder and grind till it is pulsed and combined.

  4. Add the chocolate in a large mixing bowl. Pour the browned butter over the chocolate. Add the zest from one orange to the bowl. Add the sugar mixture to the bowl.

  5. Start whisking till the chocolate has melted and everything is well combined.

  6. Add flour, cocoa powder, baking powder, and salt, milk, yogurt, and orange juice. Using a spatula mix it till combined. The batter is ready!

  7. Pour the batter into the prepared pan. Place orange chocolate over the batter. You can chop it up and place or as whole pieces as you want.

  8. Bakt at 340F for 25-35 mins. At about 20 mins, start testing the brownie with a toothpick. If batter comes out on the toothpick, it still needs to bake. If cooked crumbs are coming out the brownies are ready!

  9. Let them cool for 4+ hours and then slice. The longer you let it cool, the better it is. Ideally, let it cool in the fridge for 3 hours and then cut. These brownies are very delicate.

Notes/Tips:

  • Do not over-mix the batter, mix just till combined.

  • The brownies last well in an airtight box in a cool place for 3-5 days.

  • Bake till it’s almost done. Overbaking it will make it dense. Pierce a toothpick through it and there should be moist crumbles not batter on it.

  • Do not skip the browned butter.

  • I used Terry’s orange chocolate.
