Chocolatiest Overnight Oats

Overnight oats are one of the easiest breakfasts to meal prep and keep which is healthy and delicious. This overnight oat feels like a chocolate dessert for breakfast and will make you fall in love with breakfast! These creamy chocolatey overnight oats have 3 layers of goodness. The first is a delicious chocolate oat and chia seed layer followed by a chocolate pudding layer made using greek yogurt and the third layer is like a thick ganache which is made with milk and cocoa powder. This recipe gives you a good amount. of protein and is nutritious and the best part is- it’s so yummy! It is also vegan.

Ingredients: 

Chocolate Oat Layer:

  • 2/3 cup rolled/old fashion oats 

  • 3 tbsp chia seeds

  • 1 tbsp unsweetened cocoa powder

  • 2/3 cup nut or seed milk; or milk of your choice

  • 1.5-2 tbsp maple syrup

  • 1/8 tsp salt

  • 1/2 tsp vanilla essence

  • 3-4 tbsp chopped strawberries or raspberries; optional

Chocolate Pudding Layer:

  • 2/3 cup Greek yogurt; i used non-fat (vegan)

  • 2 tbsp nut milk; or milk of your choice

  • 2 tbsp unsweetened cocoa powder

  • 1/2 tbsp maple syrup

Ganache Layer:

  • 1.5-2 tbsp cocoa powder; unsweetened or sweetened as you want

  • 1 tbsp nut milk; or milk of your choice

  • Chopped strawberries or raspberries to garnish; optional

Directions: 

  1. Chocolate Oat Layer: In the two containers you’re setting in add half of each of the ingredients- oats, chia seeds, cocoa powder, maple syrup, nut milk, salt, vanilla essence and chopped berries.

  2. Mix it in the separate bowls till combined.

  3. Chocolate Pudding Layer: In a separate bowl, add the yogurt, milk, cocoa powder, and maple syrup.

  4. Divide it between the two containers over the oat layer. I like to use a piping bag to divide it between the two.

  5. Ganache layer: In a separate bowl add cocoa powder and milk and mix

  6. Divide it between the two containers over the pudding layer. I like to use a spoon/ piping bag to divide it among the two.

  7. If you want top it with some chopped berries.

  8. Cover and set it in the fridge for 10+ hours.

  9. Once out give it a stir and enjoy!

Notes/Tips:

  • I use unsweetned flax and chia seed milk. You can use any milk you want.

  • If you want, swap maple syrup with honey.

  • Don’t use steel-cut oats, it doesn't soak well.

  • You can make these and keep them in the fridge for 4-5 days.

  • I recommend mixing it a little before eating so that all the flavors mix well.

  • I used 18 oz containers to set them in. I recommend anything from 12 oz to 18 oz containers to set them in.
