French Fry Papdi Chaat

Papdi Chaat is a classic chaat that everyone loves so I thought I need to experiment with this with another comfort food which brought me to French fry Papdi Chaat! Instead of using potatoes I used French fries as the base and crushed Papdi over it. The crispness from the French fries honestly made it so much fun to eat! And you know you can’t go wrong with crispy potatoes. So the layers are crispy french fries, crushed Papdi, yogurt, onions, chutneys and more! An Indian fusion recipe that is taking chaat game to another level!

Servings: 4-5 servings

Ingredients: 

  • 9-10 oz French fries- fresh or frozen

  • 3-4 oz papdi

  • 1/3 cup finely chopped red onions

  • 1-2 tsp cumin powder

  • 1-2 tsp kashmiri red chili powder

  • 1/2 tbsp chaat masala

  • a pinch of black salt optional

  • 1-1.25 cup yogurt

  • 1/4-1/3 cup tamarind chutney

  • 1/4 cup coriander chutney

  • 1/2 -1 cup sev or bhujiya or mixed as you like

  • 1/4 cup chopped coriander leaves

Directions: 

  1. Cook French fries as you like- it can be air fried, baked or deep fried but it should be crispy. Let it cool for 5-10 mins so it is not extra hot but still crispy.

  2. In a bowl, mix the spices- chaat masala, red chili powder, cumin powder and black salt and keep aside.

  3. Assembly- I like to assemble this on a parchment lined quarter sheet tray but you could do it on any plate

    • Layer the French fries on the base.

    • Crush the papdis over the French fries.

    • Sprinkle 1/3rd of the spices over it.

    • Drizzle yogurt as you want over it.

    • Top with chopped onions.

    • Layer with the two chutneys. I always like extra tamarind chutney so you add chutneys to your taste.

    • Sprinkle the remaining (or as much as you want) of the spice powders over it.

    • Top with bhujiya/sev/both.

    • Garnish with chopped coriander and serve immediately with forks.

Notes/Tips:

  • I used thin frozen French fries that I airfried.

  • The taste of Papdi chaat is very personal, so add as much chutneys and spices as you like.

  • I know some people don’t coriander so skip it if you don’t like it.

  • You can prep all the ingredients except the French fries and keep from before.

  • Let the French fries cool a bit so its not very hot.
