Whipped Goat cheese Pasta
Whipped Goat cheese pasta is my love letter to goat cheese! The pasta is tossed in a whipped goat cheese mixture made with goat cheese, cream cheese, olive oil, honey, and seasonings. The pasta water tossed in the goat cheese mixture makes it a very creamy sauce. This is a no-cook sauce recipe which makes it so easy to make and a perfect summer recipe. It’s creamy, full of flavor, and saucy with the perfect balance of sweet and tart from the goat cheese. If you love goat cheese, you will keep slurping this pasta!

Ingredients:
8-10 oz pasta; I used spaghetti
4 oz Goat cheese at room temperature; I used garlic & herb goat cheese; see notes
1.5 oz cream cheese softened
2 tbsp Extra Virgin Olive oil
1/2 tbsp Honey
1/2-1 tsp Salt as per taste
1/ tsp Pepper
1/2 tsp Red chili flakes
1/8 tsp Nutmeg
1-2 cups Pasta water; save all pasta water
Chopped parsley to garnish
Directions:
In a food processor add goat cheese, cream cheese, honey, olive oil, salt, pepper, chili flakes, and nutmeg.
Blend together till everything is combined. Scrape the sides of the bowl to make sure all is combined.
Transfer the mixture to a mixing bowl or deep dish.
Boil pasta of your choice in salted water till a little over al dente. Don’t use too much water while boiling so the water is starchy. This helps the pasta soak flavors better since the sauce is a no-cook sauce. Reserve pasta water.
Add the boiled pasta to the goat cheese mixture.
Add 1-1.5 cups of pasta water to the bowl and give it a toss till the goat cheese combines with the pasta water and forms a sauce and coats the pasta. Add more water as needed to get the consistency you want.
Garnish with chopped parsley and red chili flakes and serve.
Notes/Tips:
I used garlic and herb goat cheese. You can use any savory goat cheese you want. If you use a plain one add some garlic powder and chopped parsley to the food processor to blend along with it. If you use a honey jalapeno goat cheese skip the honey to the food processor and add garlic powder, and chopped parsley to it.
Make sure the goat cheese and cream cheese are softened by keeping them at room temperature for 15-20 mins.
The better quality extra-virgin olive oil you can get the better it is.
I like to boil the pasta a little over al dente but don’t over boil it. If it takes 11 mins to boil, I boil it for about 12 mins.
If the pasta dries out, reheat pasta water and add it.
