Veggie Mushroom Pepper Cheesesteaks

Introducing to a veggie mushroom pepper cheesesteak. These are soft bread rolls layered with a sriracha aioli, melted cheese and delicious veggies. Cheesesteaks is something I was introduced to when I moved to the states and it sounded so appealing. I had to make it vegetarian and this won’t be the first vegetarian cheesesteak recipe you’ll be getting from me.
So easy to make and so delicious these are a must try! All the flavors work so well together making these a perfect bite. Easy to carry these are great for get togethers, picnics and barbecues. I hope you try it and fall in love with it as I did! Also you can make this Vegan with substitutions.

Servings: 4-5 cheesesteaks

Cooking Time: 20 mins

Total Time: 30-40 mins


Ingredients: 

  • 1 tbsp butter

  • 1.5 cups mushrooms chopped in small pieces

  • 3 tbsp corn kernels

  • 3/4 cup chopped colored peppers

  • 2 scallions chopped

  • 1 Serrano finely chopped

  • 4-5 cloves garlic minced

  • 1/2 tsp cumin powder

  • 1 tsp Salt to taste

  • 1/4 tsp pepper

  • 1/4 tsp sugar

  • 1/2-1 tsp red chili flakes

  • 1 /2-3/4 tsp dried oregano 

  • 2 tbsp chopped fresh Basil

  • 2 tbsp chopped fresh chives

  • 2 tbsp chopped fresh parsley 

  • 3/4-1 cup shredded Cheese- I used a mix of mozzarella and Mexican cheese

  • 4-5 Bread rolls/hot dogs

  • 2 tbsp Mayo 

  • 2 tbsp Ketchup 

Directions: 

  1. Mix mayo and ketchup and keep aside,

  2. Turn a pan on medium heat and add butter.

  3. Add minced garlic and serrano and cook for 2-3 mins.

  4. Add mushrooms and cook for 5 mins till its cooked through.

  5. Add corn and scallions and cook for 1-2 mins.

  6. Add chopped peppers and cook for 2 mins.

  7. Add spices and herbs and mix it in.

  8. Once fully cooked turn the flame to low/off and top it with cheese. Let it melt.

  9. Slice the bread in half and open it carefully so that it doesn’t separate into two. Lightly toast the insides of the bread rolls/hot dog bun.

  10. Spread the mayo mixture on one side of the bread.

  11. Place the insides of the bread over the cheese and veggies and scoop it in. Check the video how to do it.

  12. Serve it with chips or fries and enjoy!

Notes/Tips:

  • Toast the bread well to give it a bite.

  • You can make this veggies from before and keep. Melt cheese and assemble when you want to eat.

  • Use sliced cheese or grated cheese if you want.

  • You can add some pan fried tofu cubes to it if you want.

  • Use vegan bread, oil instead of butter, vegan cheese and vegan Mayo to make it Vegan.

  • Fresh herbs accentuate the flavor so use it if you can.
