Vegetable Lo mein Noodles

If you’re looking for an easy, delicious, and fast noodle recipe, then look so further these vegetable lo-mein noodles are it! These noodles are slightly spicy and slightly sweet with a whole lot of veggies, you can literally use anything you want. A noodle recipe that’s ready in 20 mins and makes a perfect dinner. The secret to this, cook on high heat for less time to get the crunch in the veggies and a smoky flavor. These vegetable lo mein noodles are one of the most popular noodle recipes and for good reason too, it’s that good! This recipe is Vegan (as long as you use vegan noodles)!

Servings: 4-6 servings

Prep Time: 10 mins

Cooking Time: 10-15 mins

Total Time: 20-25 mins

Ingredients: 

  • 8-10 oz egg noodles or Hakka/chow mein noodles

  • 3 tbsp soy sauce

  • 1.5 tbsp sweet chili sauce

  • 1.5 tbsp Sriracha

  • 1.5-2.5 tsp Brown sugar  

  • 1/2-1 tsp chili flakes

  • 2-3 tbsp noodle water 

  • 1/2-1 tsp Salt as per taste

  • 1/4 tsp White Pepper

  • 1 tbsp veg oil

  • 1 tbsp sesame oil 

  • 1 tbsp ginger paste 

  • 1.5 tbsp garlic paste

  • 1 large yellow onions cut into thin slices

  • 1/2 cup carrot grated 

  • 1/2 bok choy cut into thin slices

  • 1-2 scallions chopped

  • 1/2-1 pepper cut into thin slices

  • 1 -1.5 cup spinach 

Directions: 

  1. Boil noodles as per package instructions and keep them aside. Reserve 1/4 cup of noodle water.

  2. In a bowl add soy sauce, sweet chili sauce, sriracha, chili flakes, brown sugar, salt, pepper, and noodle water and mix. Keep aside.

  3. In a wok or a pan that can withstand high heat, add sesame and vegetable oil on medium-high heat.

  4. Add chopped onions, bok choy, and carrots and cook for 2-3 minutes on medium-high heat till translucent.

  5. Add peppers, scallions, and ginger-garlic paste and cook for 2-3 mins till fragrant.

  6. Add spinach and sauce mixture and cook for 2-3 mins till the spinach has wilted.

  7. Add boiled noodles and toss till it’s combined and coated well.

  8. Serve warm with your favorite vegetables!

Notes/Tips:

  • Use a wok or pan that can withstand high heat. That helps cook veggies and keep them crunchy which is important to the dish.

  • You can use store-bought sweet chili sauce if you want, I recommend making it at home. Click here for the recipe.

  • You can add whatever veggies you want! It’s a great way to empty out the fridge.

  • I prefer using egg noodles but Hakka works well too.

  • These noodles are great cold too!

  • You can skip the spinach if you want.

  • If you want to add egg, scramble it separately and add it with the spinach and sauce mixture.
