Vegan Zucchini Chocolate chip Skillet Cookie
Have Zucchini at home and don’t know hat to make with it? Why not try something sweet?! Presenting Vegan Zucchini Chocolate chip Skillet Cookie! A delicious gooey skillet cookie with zucchini but you won’t even taste it!! It is Vegan and a one bowl recipe , so two wins. You can also make this recipe just eggless and use dairy butter and milk. So easy to make this dessert is ready in 40 mins only! The zucchini helps make the cookie moist and gooey honestly you’ll be surprised how good it is. This dessert is not overly sweet making it a big win in my books. So say no to wasting zucchini and try this deliciousness. And honestly who can say no to a warm skillet cookie?

Servings: 4-6, One 8-9 inch skillet

Total Time: 40-45 mins
Ingredients:
1/2 cup - a stick -114g melted Butter or oil
2/3 cup- 100g brown sugar
1 tsp vanilla essence
1/4 cup- 62g Luke warm milk (use any milk of your choice)
1 cup-160g grated Zuchini
1.75 cups- 225g all purpose flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup -130-150g Chocolate chips and chunks
Directions:
Preheat oven to 350F.
Was the zucchini wells and grate it.
In a bowl add melted butter/oil and add sugar. Whisk it together till its combined.
Add vanilla essence grated zucchini and milk and whisk it in.
Add the flour, baking powder and salt and mix it in till almost combined.
Stir in 3/4 of the chocolate chips till fully combined.
Transfer to a lightly greased skillet. Top with remaining chocolate chips.
Bake at 350F for 20-25 mins.
Top with ice cream and serve immediately!
Notes/Tips:
You can use any milk you like. i’ve tried this recipe with almond, oat and even whole milk (When I didn’t make it vegan) and it all works well.
Use a vegan butter or oil. Do not use a nut butter.
I like to use chocolate chunks and chips for textural difference. The chocolate chunk melt making it gooey.
You can peel the zucchini and grate it or grate it with the skin on.
Do not over mix the mixture. The more you mix the tougher it’ll get. Just mix till combined.
