This Vegan Banana bread recipe is a really quick & easy! It is super moist and pairs perfectly with coffee or even hot chocolate. I developed this recipe during 2020 Quarantine with my own flair. The swirled effect gives it an added effect which adds so flavour and its looks amazing! This is super easy to make if you have last minute guests or even if you are craving something sweet.

Servings: 8 inch loaf

Prep Time:15 minutes

Baking Time: 40-50 minutes

Ingredients: 

  • 3 large/4 Medium overripe bananas

  • 1/2 cup Maple syrup

  • 1/3rd cup Coconut oil/vegetable oil

  • 1 3/4th cup AP Flour

  • 2 Tsp Baking powder

  • 1/2 Tsp Baking soda

  • A pinch of salt

  • 2 Tbsp Cocoa powder

  • 1/3rd cup Nut/Oat Milk

  • 1/3rd cup Vegan Chocolate chips

 Directions: 

  1. Preheat the oven to 350F.

  2. Prepare your loaf pan by greasing it.

  3. In a medium sized bowl, mash the bananas. Add the oil, maple syrup, milk and mix.

  4. Add the flour, baking soda and baking powder and salt and mix till just combined. Do not over mix.

  5. Take out half of the mixture in another bowl. Add the cocoa powder and half of chocolate chips to it.

  6. Pour both the batters alternately in the pan. Take a fork/knife and swirl through the pan to create the swirled effect.

  7. Sprinkle the rest of the chocolate chips of top of the batter.

  8. Bake at 350F for 40-50 minutes till its cooked all the way through.

  9. Best served warm.

Notes/Tips:

  • Use overripe bananas, it is very important. If you do not have overripe bananas place them in an oven for 5-10 minutes at 200F to ripe them.

  • Sift the flour to prevent lumps.

  • Do not over mix the batter so the final product light & airy.

  • If you do not want to swirl it, omit the cocoa powder and add 1 tbsp of flour instead.

  • Want it more chocolatey? Add more chocolate chips to the batter.
