Ingredients:
8-12 vegan dumplings
1 baby cucumber cut into small pieces
1/2-3/4 cup of corn kernels
1 cup edamame; boiled
3-5 scallion greens chopped
2/3-3/4 cup cilantro chopped
1/2 cup grape tomatoes cut into half
1/4 cup toasted sesame seeds
Oil to cook dumplings if needed
Sauce:
1/4 cup dark soy sauce
1.5 tbsp vegan oyster sauce
2 tbsp Schezwan sauce
1 tbsp mushroom soy sauce (optional)
1/2 tbsp lime juice
Salt & pepper as per taste
Directions:
Sauce: In a mixing bowl, add all the ingredients for the sauce. Mix it well till combined and keep it aside.
Pan fry dumplings of your choice. I used gyoza and pan-fried them as per package instructions.
In a mixing bowl add the chopped tomatoes, edamame, corn, scallion greens, coriander, sesame seeds, and cucumber, Add the dumplings and sauce and give it all a toss. Everything should be coated well in the sauce.
Serve and enjoy! This tastes well cold and warm.
Notes/Tips:
Use as many veggies as you want and like.
I used trader Joe Gyozas. I followed the package instructions to cook them.
Make sure the sesame seeds are toasted!
If your edamame is boiled just add them. if they aren't, boil them.
