Servings: 4-5 servings

Total Time: 30 mins

Ingredients: 

  • 8-12 vegan dumplings

  • 1 baby cucumber cut into small pieces

  • 1/2-3/4 cup of corn kernels

  • 1 cup edamame; boiled

  • 3-5 scallion greens chopped

  • 2/3-3/4 cup cilantro chopped

  • 1/2 cup grape tomatoes cut into half

  • 1/4 cup toasted sesame seeds

  • Oil to cook dumplings if needed

Sauce:

  • 1/4 cup dark soy sauce

  • 1.5 tbsp vegan oyster sauce

  • 2 tbsp Schezwan sauce

  • 1 tbsp mushroom soy sauce (optional)

  • 1/2 tbsp lime juice

  • Salt & pepper as per taste

Directions: 

  1. Sauce: In a mixing bowl, add all the ingredients for the sauce. Mix it well till combined and keep it aside.

  2. Pan fry dumplings of your choice. I used gyoza and pan-fried them as per package instructions.

  3. In a mixing bowl add the chopped tomatoes, edamame, corn, scallion greens, coriander, sesame seeds, and cucumber, Add the dumplings and sauce and give it all a toss. Everything should be coated well in the sauce.

  4. Serve and enjoy! This tastes well cold and warm.

Notes/Tips:

  • Use as many veggies as you want and like.

  • I used trader Joe Gyozas. I followed the package instructions to cook them.

  • Make sure the sesame seeds are toasted!

  • If your edamame is boiled just add them. if they aren't, boil them.
