Teriyaki noodles with Grilled Paneer

These Teriyaki noodles with grilled paneer is so delicious and such a quick meal. The flavors are simple and not overpowering at all which makes everyone love it. This recipe is so versatile and you can use all your favorite vegetables. I marinated the paneer in the teriyaki marinade before grilling it. That gave it an extra burst of flavor and it was so yum! This is a perfect meal for the days you want something delicious with minimal work. Teriyaki marinade adds sweetness and so much flavor to the dish, you need to try it.

Ingredients:

  • 6-7 oz paneer cut into cubes

  • 1/2-2/3 cup teriyaki marinade or sauce; divided

  • 1 tbsp vegetable/sesame oil

  • 1/2 onion sliced

  • 1/4 cup grated carrots

  • 3-4 white mushrooms in thin slices

  • 1/2 bell pepper sliced

  • 2-3 scallions chopped

  • 2-3 tbsp chopped celery

  • 1 tbsp soy sauce

  • 1/2-1 tbsp sriracha

  • 1/2-1 tsp salt as per taste

  • 1/4 tsp white pepper

  • 1/4 tsp chili flakes

  • 7-8 oz thin noodles or hakka noodles

Directions:

  1. In a bowl add paneer cubes and add 2- 3 tbsp teriyaki sauce and give it a toss to coat all the paneer cubes. Let it sit for 10 mins then grill.

  2. Boil water in a saucepan and boil noodles as per package instructions.

  3. Put a pan on medium heat and add oil.

  4. On a griddle or pan spray some oil and grill paneer on both sides till they are browned about 3-4 mins on both sides. Cook this alongside the veggies to save time.

  5. Once warm, add onions, carrots, and mushrooms. Saute for 3-4 mins till the onions are translucent and mushrooms are half cooked.

  6. Add the rest of the veggies and saute them for 3-5 mins till they are all cooked, you want them crispy.

  7. Add the remaining teriyaki sauce, about 1/4 cup, soy sauce, sriracha, salt, pepper, and chili flakes. Toss them together.

  8. Add the grilled paneer and boiled noodles and toss them all together.

  9. Cook it for 1-2 mins and it’s ready!

  10. Garnish with some sesame seeds and serve. It’s great warm or cold!

Notes/Tips:

  • I love using California olive ranch teriyaki marinade and sauce. You can use any you like or make it at home.

  • You can use any veggies you like.

  • Don’t overcook the veggies, you want them crispy.

  • You can swap paneer with tofu if you want.

  • I like to use thin egg noodles for this recipe.
