Air fryer Tandoori Cauliflower steaks served with yogurt & coriander chimichurri

Ingredients: 

Cauliflower steak:

  • 1 cauliflower head cut into 2-3 steaks

  • 1.5-2 tbsp mustard oil

  • 1 tbsp vegetable oil

  • 2 tsp Kashmiri chili powder

  • 1 tsp deggi chili powder as per taste

  • 1 tsp coriander powder

  • 1.5 tsp cumin powder

  • 1/2 tsp turmeric powder

  • 1/4 tsp garam masala

  • 1 tsp salt as per taste

  • 1/2 tsp black salt

  • 1 tsp sugar

  • 1/2 tsp black pepper

Serve and Chimichurri:

  • 1/2-3/4 cup yogurt of your choice; i prefer greek yogurt

  • 1/3 cup chopped coriander leaves

  • 2 cloves of garlic minced

  • 2-3 green chilis finely chopped

  • 1 tsp ginger paste

  • 1 tsp red vine vinegar

  • 1/2 tbsp lime juice

  • 1/4-1/3 cup olive oil

  • Salt & pepper as per taste


Directions: 

  1. Preheat the air fryer to 425F. I used the roast function in my air fryer.

  2. Cut the cauliflower into steaks. I try to get 3 steaks from it, though 2 is easier, and then use the leftover florets in another dish.

  3. In a bowl mix the mustard oil, vegetable oil, and spices for the steak till combined.

  4. Bruh the mixture on the steaks getting the mixture all over the. Flip them over and repeat.

  5. Cook at 425F for 16-20 mins, carefully flipping them mid-way.

  6. Once they are browned and crispy on top and cooked through they are ready!

  7. Chimichurri: Make the chimichurri by mixing all the ingredients in a bowl. Ideally prep this two hours before, if not prep it when you put the cauliflower in so the flavors can marinate for 15 minutes.

  8. Serve: On a plate spread yogurt, and top it with the cauliflower steak. Drizzle some chimichurri over it and enjoy!

Notes/Tips:

  • Flipping them over is very important to get an evenly cooked cauliflower.

  • You can use hung yogurt if you don’t have Greek yogurt.

  • The chimichurri will last well in the fridge for 2-3 weeks.

  • Mustard oil adds a lot of flavor!
