The Perfect Veggie Sandwich for Summer

Craving a delicious and refreshing bite this summer? Let me introduce you to my favorite veggie summer sandwich! Imagine perfectly toasted bread layered with marinated greens, creamy stracciatella, and roasted peppers. Add a generous spread of rich pizza sauce, a hint of tangy mustard, and a drizzle of balsamic for that perfect finishing touch. This sandwich is my go-to for summer picnics and quick lunches, bursting with flavor and oh-so-satisfying. Trust me, once you try it, you’ll be making it all summer long! Let’s dive into the recipe and create this mouthwatering delight together!

Servings: 2-4 servings

Prep Time: 15-20 mins

Baking Time: 20-40 mins

Total Time: 1 hour

Ingredients: 

  • 14 oz bread loaf; I like using soft French or Italian bread

  • 2/3-3/4 cup Stracciatella; check notes

  • 1 big pepper roasted; check notes

  • 2 cups arugula

  • 1/3 red onion cut into thin slices

  • Salt to taste; ideally use a coarse salt grinder

  • Pepper to taste; ideally use a whole pepper grinder

  • 2-3 tbsp olive oil

  • 2-3 tbsp balsamic vinegar drizzle

  • 1/2-3/4 cup pizza sauce

  • 2-4 tbsp mustard

Directions: 

  1. Preheat oven to 375F. Prep a parchment-lined baking tray and keep it aside.

  2. Add arugula, red onions, salt, pepper, 1 tbsp olive oil, and 1/2-1 tbsp balsamic vinegar in a mixing bowl. Mix it well and keep it aside.

  3. Slice the bread in half horizontally and drizzle/ spray olive oil on both sides. Bake at 375F for 6-8 minutes till its crispy.

  4. Spread a thick layer of the pizza sauce on one side of the toasted bread and a thin layer of mustard on the other side of the spread.

  5. Top the arugula on the base of the bread.

  6. Spread stracciatella over the salad. Grind some whole pepper over it using a pepper grinder.

  7. Place roasted pepper pieces over the stracciatella.

  8. Drizzle balsamic vinegar over the peppers.

  9. Sandwich it close and it’s ready!

Notes/Tips:

  • You can use bottled roasted peppers if you want. I roast my peppers at home in the oven or air fryer. You can use any color pepper you like. I used yellow for this recipe to add color.

  • You can make it with any bread you like, I feel it’s best on something soft and crispy when baked.

  • If you want to use a homemade pizza sauce recipe click here.

  • You can use burrata if you don’t have time to make stracciatella. Cut it open and spread it over the sandwich. Ideally, make or buy stracciatella for this recipe.

  • Fresh ground pepper and salt make a difference in this recipe!
