Vegan Spicy Miso Noodles

Noodles are basically a lifeline, so you’ll always see me experimenting with it. These are spicy miso noodles that have so much flavor that is a must try! It is ready in 15-20 mins which is always a plus and these noodles are amazing cold as well. All the ingredients work so well with each other and compliment the miso flavor. If you can’t find Miso paste check my notes on how to replace it. An easy weekday meal that will become your go to dish. This pairs perfectly with simple sautéed veggies like Stir fry Bok choy or a mixed green stir fry or even some sliced cucumbers.

Servings:  3-4 servings

Prep Time: 5 mins

Cooking Time: 15 mins

Total Time: 20 mins

Ingredients: 

  • 1/2-1 tbsp Sesame oil

  • 1.5 tbsp miso

  • 1/2 tbsp peanut butter

  • 1 tbsp tahini

  • 1 tsp chili sauce

  • 1 tsp dark soy sauce 

  • 1/2 tsp ketchup

  • 1 tsp maple syrup/honey

  • 1 tsp vinegar

  • 3-4 cloves garlic finely chopped

  • 1 tsp ginger paste 

  • 2-3 scallions chopped, separate white and greens.

  • 1 tsp Chili flakes as per taste

  • 1 tsp Salt as per taste

  • 1/4 tsp Pepper

  • 10 oz noodles of your choice. I used rice noodles

Directions: 

  1. Boil and drain noodles and reserve 1/4-1/2 cup pasta water. Do not over boil the noodles as they cook in the sauce.

  2. In a pan on medium heat add sesame oil.

  3. Add chopped garlic, ginger paste and scallions (whites and some greens) and cook till ginger and garlic is fragrant, about 3-4 mins.

  4. Add tahini, peanut butter and miso and cook for 1-2 mins.

  5. Add soy sauce, chili sauce, vinegar, ketchup, maple syrup, salt, pepper and chili flakes and cook for 2 mins.

  6. Add 1/4 cup pasta water and mix it together.

  7. Add the boiled noodles and mix well.

  8. Top with the rest of the greens of scallions and serve! You can have these noodles cold or hot, both taste great.

Notes/Tips:

  • If you don’t have miso paste using half the amount more tahini and double the amount of soy sauce.

  • Do not over boil the noodles as they cook in the sauce.

  • You can make these noodles ahead of time as they are delicious cold as well.

  • Any kind of noodles work well. I like to use flat rice noodles.
