Spicy Garlic Spaghetti

This is a pasta recipe I came up with on the fly when I was in the mood of crazy experimentation and let’s say it was a super hit. The spaghetti is well coated in a spicy garlic sauce with a fusion of flavors that work so well together. The first time I made this my brother licked the bowl clean, literally. A delicious meal that is ready in less than 30 mins that is vegan friendly! I’ve made this so many times after the first experimentation that is a staple at home now. You need to try it for yourself. Yes the gochujang and soy sauce aren’t a mistake- trust me it works so well together. Go try it and see for yourself and how you’ll definelty be making it often! A perfect bite that will leave you wanting more.

Servings: 3-5 servings

Prep Time: 10 mins

Cooking Time: 10-15 mins

Total Time: 25 mins

Ingredients: 

  • 10-12 oz spaghetti  

  • 1-1.5 tbsp olive oil

  • 8-10 cloves of garlic minced

  • 3-4 scallions chopped; greens & whites separated

  • 1.5 tbsp Gochujang 

  • 1 tbsp Chili paste

  • 3-4 tbsp tomato paste 

  • 2 tsp Soy sauce

  • 1/2 tsp Ginger powder

  • 1 tsp Onion powder

  • 1/2-1 tsp Salt as per taste

  • 1/2-1 tsp chili flakes 

  • 1/4 tsp pepper

  • 1/4 tsp Ajinomoto

  • 1 -1.5 tbsp Nutritional yeast - optional

  • About 1/2-2/3 cup Pasta water 

  • 2 tbsp chopped parsley 

  • 2 tbsp coriander chopped 

  • 1/3-1/2 cup Parmesan cheese grated

Directions: 

  1. Boil pasta according to the instructions in seasoned (salted) water until almost al dente. It will cook for 1- 2 minutes in the sauce. Reserve the pasta water.

  2. Add olive oil to a pan on low-medium heat. Add sliced garlic and cook for 1-2 minutes until it starts to brown.

  3. Add the whites of the scallions and cook for 2-3 mins.

  4. Add the sauces and seasonings - soy, gochujang, tomato paste, chili paste, salt, pepper, chili flakes, ginger powder and nutritional yeast and mix.

  5. Cook for 3-5 mins till it is well-cooked. Make sure the raw flavor of the tomato has gone.

  6. Add pasta water and mix. First, add 1/3 cup and then more if needed. Let it come to a simmer.

  7. Add boiled spaghetti and toss it in. Let it cook for 2-3 minutes till the pasta is cooked through and is well coated in the sauce.

  8. Add the scallion greens, and chopped herbs and mix well. Add more pasta water if needed. Toss it well.

  9. Add grated Parmesan and mix. This pasta isn’t very saucy but coated well in the sauce.

  10. Serve with more grated cheese over it and enjoy!

Notes/Tips:

  • Nutritional yeast is optional but it adds a creamy texture to the pasta so I highly recommend it.

  • You can make the sauce from before and keep. Add pasta, pasta water and cheese fresh before eating.

  • Make sure out cook the sauce down before adding past water and pasta. All the flavors should cook well and infuse together.

  • This pasta is a well coated recipe but not the most liquid sauce recipe.

  • If you like it milder mix in 2 tbsp heavy cream with the pasta water.
