Spicy Garlic Spaghetti
This is a pasta recipe I came up with on the fly when I was in the mood of crazy experimentation and let’s say it was a super hit. The spaghetti is well coated in a spicy garlic sauce with a fusion of flavors that work so well together. The first time I made this my brother licked the bowl clean, literally. A delicious meal that is ready in less than 30 mins that is vegan friendly! I’ve made this so many times after the first experimentation that is a staple at home now. You need to try it for yourself. Yes the gochujang and soy sauce aren’t a mistake- trust me it works so well together. Go try it and see for yourself and how you’ll definelty be making it often! Ingredients:
8-10 oz spaghetti
1 tbsp olive oil
8-10 cloves of garlic finely sliced
3 scallions chopped
3/4th tbsp Gochujang
1 tbsp Chili paste
1 tbsp tomato paste
2 tsp Soy sauce
1/2 tsp Ginger powder
1 tsp Onion powder
1 tap Salt
1/2 tsp chili flakes
1/4 tsp pepper
1 -1.5 tbsp Nutritional yeast - optional
About 1/2-2/3 cup Pasta water
2 tbsp Parsley chopped
2 tbsp coriander chopped
1/3 cup Parsmesan cheese grated
Directions:
Boil pasta as per pasta instructions in seasoned (salted) water till almost al dente. It will cook 1-2 mins in the sauce. Reserve pasta water.
In a pan on low-medium heat add olive oil. Add sliced garlic and cook for 3-4 mins till it starts to browns.
Add scallions ad cook for 1-2 mins.
Add the sauces and seasonings - soy, gochujang, tomato paste, chili paste, salt, pepper, chili flakes, ginger powder and nutritional yeast and mix.
Cook for 3-5 mins till its a well cooked paste.
Add pasta water and mix. First 1/3 cup and then more if needed. Let it simmer.
Add boiled spaghetti and herbs and toss it in. Let it cook for 4-5 mins till the pasta is cooked through and is well coated in the sauce.
Add grated Parmesan and mix.
Serve and enjoy!
Notes/Tips:
Nutritional yeast is optional but it adds a creamy texture to the pasta so I highly recommend it.
You can make the sauce from before and keep. Add pasta, pasta water and cheese fresh before eating.
Make sure out cook the sauce down before adding past water and pasta. All the flavors should cook well and infuse together.
This pasta is a well coated recipe but not the most liquid sauce recipe.
If you like it milder mix in 2 tbsp heavy cream with the pasta water.
