Quick Sesame Peanut Noodles

Noodles are my go to meal and I love them extra when they’re quick to make and full of flavor! These sesame peanut noodles are the perfect weekday meal when you want something quick, simple and slurping delicious. It’s made in 15 mins and with simple ingredients and doesn’t create a mess while cooking. The flavors of peanut and sesame are a match made in heaven when paired with spice and add noodles to it? I am drooling just thinking about it. These noodles are great with any stir fried veggies, tofu, dumplings to make it a complete meal.

Servings: 3-4 servings

Prep Time: 5 mins

Cooking Time: 10 mins

Total Time: 15 mins

Ingredients: 

  • 3-4 cloves garlic minced or finely chopped

  • 2 tsp sriracha

  • 2 tsp dark soy

  • 1/2 tsp chili vinegar /white wine vinegar

  • 1tbsp +1 tsp peanut butter

  • 1.5 tsp sesame seeds

  • 1/2 tsp Ginger paste or finely grated or powder

  • 2 tbsp chopped peanuts

  • 6-8 oz noodles of your choice- I used brown rice noodles

  • 3-4 Tbsp noodle water

  • 1.5 tbsp sesame oil

  • 1 tsp Chili flakes as per taste

  • 1 tsp Salt as per taste

  • 1/4 tsp Pepper

Directions: 

  • Boil noodles as per packet instructions. Strain and mix in little oil so it doesn’t stick and keep aside. Make sure to save the noodle water.

  • In a bowl add sriracha, dark soy, vinegar, peanut butter and ginger paste. Using a whisk, mix it together till combined.

  • Heat up the oil on a medium heat.

  • To the bowl add the garlic, peanuts and sesame seeds. Mix it together and bring it together to the centre of the bowl, making sure all the garlic is in the centre.

  • Pour the hot oil over the lump in the middle. It will sizzle and start help flavor the garlic. Using a whisk mix it together.

  • Add the noodle water and mix it together till no lumps.

  • Add the noodles and mix them in.

  • As per taste add the salt, pepper and chilli flakes.

  • Optional step but I love doing it sometimes- heat the mixed in noodles on a pan for 2-4 mins on medium heat.

  • Top it with sesame seeds, chopped peanuts and/or chilli crunch.

Notes/Tips:

  • You can use creamy or chunky peanut butter.

  • You can use any noodles you like. My favorite are the brown rice noodles but i love these in soba or regular rice noodles as well.

  • Pour the oil over the garlic, this helps cook it.

  • Optional- Cooking the noodles helps bring out the flavors so i like to do it from time to time.
