Roasted veggie cheesy pesto Panini
This roasted veggie cheesy pesto panini is a delicious recipe that is a must-try for days when you don’t want an elaborate meal, but still want something tasty! You can use any veggies you want and oven roast them. They are mixed with basil pesto and topped on bread which is layered with cheese, and then grilled to perfection! It’s so easy to make and so so delicious.
It’s crispy, cheesy full of flavor and veggies. This recipe is also a great way to use up any veggies at home! Kids will love this panini as well. You can meal prep the veggie pesto mixture and keep it as well, making this a no-brainer recipe. Serve it with your favorite sides like sweet potato fries or salad and this is a meal you’ll keep repeating!

Ingredients:
Roasted Veggie pesto mixture:
1/2 onion sliced
1/2-1 bell pepper sliced; use any colors you want
1/3 cup grated Carrots
4-5 mushrooms chopped into thin slices
6-8 grape tomatoes
1/2 jalapeño chopped into small pieces
1 tsp Salt as per taste
1-1.5 tbsp Olive oil
1/2 cup corn kernels
3-4 tbsp basil pesto
Assembly:
8 oz bread; i used ciabatta
2-4 triangles laughing cow cheese or 3-4 tbsp cream cheese (softened)
1 tbsp melted butter or butter spray
Directions:
Preheat the oven to 400F. Line a baking tray with parchment paper.
Add all the veggies except corn- onions, peppers, carrots, mushrooms, jalapenos, and grape tomatoes in a mixing bowl.
Add salt and olive oil and give it a toss.
Put the veggies on the lined baking tray and bake it for 20-30 mins till the vegetables are roasted to your liking. Flip the veggies over midway.
Prepare Basil pesto. I like to blend it more to form a smoother paste.
Once roasted transfer the roasted veggies to a bowl.
Add corn and pesto and mix. The mixture is ready and keep aside.
Slice the bread of your choice. I like using ciabatta for this.
Apply cheese to one side of the bread.
Top with pesto veggie mixture.
Sandwich the bread.
Brush melted butter over it or spray butter.
Cook in a panini press till it’s toasty.
Serve warm with your favorite sides.
Notes/Tips:
Chewy bread works the best for paninis, so I like using ciabatta.
