Roasted Vegetable Sandwich

Roasted vegetables makes everything better so when you pair it with a sandwich its just FIRE! This roasted vegetable sandwich is so delicious. A toasty bread layered with goat cheese, pesto, leafy greens, roasted vegetables making it an absolute feast. The oven does most of the cooking which makes this recipe so much easier. The caramelised onions brings the entire sandwich together. Make your weekday meals so delicious and easy with this roasted vegetable sandwiches.

Servings: 2-3 servings

Total Time: 1 hour

Ingredients: 

  • 8 -10 oz Baguette or French loaf bread

  • 4-5 tbsp Goat cheese 

  • 3-4 tbsp Pesto

  • 1 small onion caramelised - check notes

  • 3-4 tbsp Olive oil 

  • 1 tsp salt

  • 1/8 tsp pepper

  • 1/2-1 tsp Chili flakes

  • 1 tbsp chopped sage leaves

  • 5 oz cherry/grape Tomatoes

  • 5-6 Garlic cloves

  • 1/2 large Red peppers sliced

  • 2/3 portobello Mushrooms sliced

  • 1 medium golden potatoes thinly sliced  

  • 3 oz arugula or spinach


    Directions: 

  1. Preheat oven to 400F.

  2. On a lined baking tray, place tomatoes, peppers, mushrooms and potatoes in 4 quarters.

  3. Drizzle about 2 tbsp of olive oil, salt, pepper, Chili flakes and sage over the veggies and give it a toss.

  4. In an oven safe bowl place garlic cloves and place in the centre of the tray.

  5. Put 1-1.5 tbsp of olive oil in the bowl and mix.

  6. Put the tray for the vegetables to roast in the oven. Let it cook for 25-35 mins, giving it a toss midway. The potatoes will be done in about 15 mins so take them out earlier. Make sure to toss the garlic so it doesn't burn.

  7. When the vegetables are roasting caramelise the onions. Put 1/2 tbsp oil in a pan and cook the onions with some salt on low heat for 20-25 mins, giving it a stir in intervals.

  8. When the vegetables are roasting, sliced the bread in half. Drizzle or spray olive oil over it and put it in the oven to bake for 5-6 mins or as per package instructions till slightly toasted and golden brown.

  9. Assemble:

    • On one side of the bread, spread goat cheese and on the other side, spread pesto and smash the garlic cloves.

    • Over the cheese, spread arugula and then top with all the veggies and onions.

    • Sandwich the two sides together, slice and serve!

  10. Serve warm with your favorite sides like fries, chips, pickles and more!

Notes/Tips:

  • You can roast the vegetables from before and keep. If you like the sandwich hot, warm it up in the oven again for 5-6 mins.

  • You can make it with any bread, I feel its best on a baguette to French loaf bread.

  • Potatoes take less time to cook. You will need to take the potatoes out before.

  • Tossing the garlic is important otherwise one side will burn and one won’t cook.
