Roasted Paneer Hummus Wrap

Roasted paneer hummus wrap is a delicious fusion recipe which is perfect for a weekday lunch. The wrap is filled with a creamy hummus, crunchy lettuce, roasted paneer, sliced onions, grated carrots, crumbled feta and a drizzle of a sweet chili sauce to bring it all together. The paneer (you can use tofu if you like) is marinated in a mix of spices like Zaatar, cumin powder with tomato paste, olive oil and Balsamic vinegar and then oven roasted. Every bite is full of flavor and it’s high in protein as well. I use low calorie tortillas as the wraps. Kids and adults will love this, you must try it!

Servings: 4-6 wraps

Prep Time: 20 mins

Marinating Time: 2-3 hours

Cooking Time: 20 mins

Total Time: 3-4 hours

Ingredients: 

Roasted paneer:

  • 8 oz paneer cut into small cubes about 1.5 inch

  • 2 tbsp Tomato paste

  • 1.5 tbsp Zaatar

  • 1 tsp Cumin powder

  • 1 tbsp Olive oil

  • 1 tsp balsamic vinegar

  • 1-2 tsp chili flakes

  • 1/2 tsp Salt as per taste

  • 1/8 tsp Pepper

  • 1/8 tsp sugar

Assemble:

  • 4-6 soft tortillas; I use low calorie tortillas

  • 3/4-1 cup Hummus

  • 1.5 cup chopped Romaine Lettuce

  • 1/2 medium red Onion chopped in thin slices

  • 3-4 tbsp sweet chili sauce

  • 1/3 cup thinly grated carrots

  • 2-3 tbsp crumbled feta cheese


    Directions: 

  1. If you are using homemade hummus which I highly recommend, make it a day before and keep. Recipe is here.

  2. Paneer:

    1. Cut the paneer into small cubes and keep aside.

    2. In a mixing bowl, add Zaatar, tomato paste, cumin powder, chili flakes, olive oil, balsamic vinegar, salt, pepper and sugar. Mix it together till it forms a paste.

    3. Add paneer cubes and toss it in the paste coating the cubes well.

    4. Cover the bowl with cling wrap or damp towel and keep it marinated for 2-3 hours. If you can give it a toss in between.

    5. Once ready to eat, preheat the oven to 380F. Check notes for other cooking methods.

    6. Prepare a baking tray by lining it with parchment paper.

    7. Place the cubes on the baking tray and keep space between the cubes.

    8. Cook for 8-10 mins at 380F. Flip them midway.

  3. Assemble: Warm a tortilla slightly. Spread about 2-3 tbsp hummus on the tortilla. Layer some chopped lettuce over it. Put some of the roasted paneer over it. Top with some sliced onions and grated carrots. Crumble feta cheese over it. Drizzle 1-2 tsp of the sweet chili sauce over it.

  4. Roll it into a wrap, slice and enjoy!

Notes/Tips:

  • You can use firm or extra firm tofu for this recipe to make it vegan.

  • I recommend homemade hummus, you can use store bought if you want.

  • You can air fry or pan fry the paneer cubes. Preheat the air fryer to 360F and cook for 6-10 mins. Flipping midway. For pan frying, pan fry paneer cubes with little oil on a skillet till all sides are cooked.

  • You can use any wrap or flatbread you like for this recipe.
