Roasted Cauliflower Brie Sandwich with a Sriracha Mustard Aioli

A delicious Vegetarian/Vegan sandwich recipe- Roasted Cauliflower Brie Sandwich with a Sriracha Mustard Aioli. I am always experimenting with sandwich recipes and this is something you need to try!! A warm toasty Ciabatta layered with melty brie cheese, roasted spicy cauliflower, spinach, pickled onions and French fries all put together with a Sriracha Mustard Aioli. This requires minimal work and comes together so quickly which is such a bonus. All the flavors and textures work so well together! For Vegan substitutions check notes.

Servings: 2-3 sandwiches

Total Time: 30-40 mins

Ingredients: 

Assembly:

  • 10-14 oz Ciabatta bread 

  • 5-7 oz Brie cheese

  • 2-3 oz Arugula/spinach

  • 1/2 onion pickled in red wine vinegar 

  • 10-15 pcs fries  (i used waffle fries)

Sriracha mustard aioli:

  • 2 tbsp sriracha 

  • 1 tbsp ketchup 

  • 1/4 cup Mayo

  • 1/4 cup ranch

  • 1 tbsp mustard 

  • 1 tsp Lemon juice 

Roasted Cauliflower:

  • 14-16 oz Cauliflower florrets 

  • 4-5 cloves garlic in thin sliced

  • 1 tsp Chili flakes 

  • 2 tbsp Hot sauce/ Sriracha

  • 1 tsp salt as per taste

  • 1/4 tsp Pepper

  • 1/2 tbsp oil 

Directions: 

  1. Preheat oven to 400F.

  2. Roasted Cauliflower: In a bowl mix the cauliflower, garlic, hot sauce, chili flakes, salt, pepper and oil.

  3. Spread it out on a lightly greased oven safe tray. Bake for 15 mins at 400F giving it a toss midway.

  4. Sriracha mustard aioli: Mix the sriracha, ketchup, mayo, ranch, mustard and lemon juice and ketchup and keep aside.

  5. Assembly: Slice ciabatta and spread some butter on it. Place brie slices over one half of the bread and use a spoon to spread it out.

  6. Toast on a griddle or Forman grill till the bread is toasty and brie has melted.

  7. Spread some of the sriracha mayo on one side of the bread.

  8. Over the cheese spread the sinach/ arugula.

  9. Top with cauliflower and pickled onions and fries.

  10. Sandwich together and serve with the sriracha aioli.

Notes/Tips:

  • You can meal prep this recipe by preparing the cauliflower and sriracha mustard aioli from before. Just warm the cauliflower while assembling.

  • Use any chewy bread you like if you don’t have ciabatta. Sourdough also works so well.

  • Brie works very well with this recipe. If you find it too strong use mozzarella or even burrata.

  • The fries add a lot of flavour and texture to the sandwich. I air fried waffle fries for the sandwich.

  • You can air fry the cauliflower if you want. Cook at 380F for 10-15 mins till its cooked through, giving it a toss midway.

  • This recipe can be made Vegan using substitutions like Vegan cheese, Vegan Mayonnaise and Vegan Ranch.
