Paprika Chickpea Tacos

Paprika Chickpea tacos are insanely delicious and healthy tacos are a must try on taco tuesday! I can’t believe i dont have a taco recipe up yet so i had to share this one first. They are healthy and just packed with so much flavor and a kick off spice. I love the flavor of paprika with chickpeas and in a taco form who won’t?! These are ready in about 30 mins and is just a lifesaver in those crazy weeknights. I love assembling these tacos with lettuce, shredded cheese, sour cream, salsa and hot sauce. It works with anything! You can even make the filling as a quesadilla and enjoy!

Servings: 6-8 tacos

Prep Time: 15 mins

Cooking Time: 20 mins

Total Time: 35 mins

Ingredients: 

  • 1 medium/ 1/2 cup Onion finely chopped

  • 1/4 cup finely chopped bell peppers

  • 1 Jalapeño chopped finely

  • 1-2 Serrano chopped

  • 1 tsp Paprika

  • 1 -2 tsp Garlic powder

  • 1 tbsp Ginger paste

  • 1/4 tsp black Pepper

  • 1 tsp Salt

  • 1/2 -3/4 tsp Cumin powder

  • 1.5-1.75 cup boiled Chickpeas

  • 1.5 tsp Honey (vegan substitutes in notes)

  • 6 -8 medium Corn tacos

  • 3 tbsp cilantro

  • Lemon as a garnish

  • 1 tbsp olive oil

Directions: 

  1. In a pan add olive oil. Add chopped onions and cook on low-medium heat. Cook for 6-8 mins till the onions start to brown.

  2. Add chopped bell peppers, jalapeño and Serrano peppers and cook for 2-3 mins till they soften.

  3. Add ginger paste and spice powders- paprika, garlic powder, cumin powder, pepper and salt, and mix it in. Cook for 1-2 mins.

  4. Add 1 tbsp of water to deglaze if need be.

  5. Add boiled chickpeas and and mix it till it comes together.

  6. Add cilantro and mix it together.

  7. Turn off the flame and add honey and mix.

  8. Assemble in tacos with some lemon juice, sour cream, shredded cheese, lettuce, hot sauce and Salsa or condiments of your choice.

Tips/Notes:

  • Do not over boil the chickpeas or it will be mushy.

  • You can even add black beans to the mix.

  • Don’t skip the lemon juice on the tacos. It adds acidity and balances all the flavor.

  • You can add some cheese on the tortilla and heat it covered on a griddle for it to melt and then assemble the tacos.

  • You can use any tacos of your choice.

  • Instead of honey you use maple syrup or molasses to make it Vegan.

  • You can add black beans and corn to it too.
