Paneer Tikka Sub Sandwich

Ingredients:
Paneer:
400-500g Paneer cut into big cubes, I cut it into 12 cubes
1/3 cup yogurt (Indian yogurt)
1.5 tsp Ginger paste
1 tbsp Garlic paste
1/2-1 tsp Red chili powder
1/4 tsp Turmeric powder
3/4 tsp Coriander powder
1 tsp Cumin powder
1 tsp Kasuri methi
1/8 tsp Amchur powder
1/8 tsp Ajwain powder
1/4 tsp garam masala
1/2 tsp black salt
1 tsp Salt as per taste
1/4 tsp Pepper
1/2 tsp Sugar
1 tsp Ghee
1/3 cup dry roasted chickpea flour (besan)
Oil to brush
Assembly:
2 loaves (about 16oz) of your favorite sub bread, I used an Italian loaf
3-5 slices of cheese, I used pepper jack cheese
3-4 tbsp coriander chutney
2-3 tbsp mayonnaise
1-2 tbsp spicy maggi sauce
1 small red onion sliced
1/2 bell pepper cut into thin slices
1 tomato cut into thin slices
5-6 romaine lettuce leaves
3-4 tbsp melted butter
Chaat masala to sprinkle
Directions:
Preheat oven to 425F.
Paneer: In a bowl add curd, roasted chickpea flour, garlic paste, ginger paste, and all the spices (Red chili powder, turmeric, coriander, cumin, kasuri methi, ajwain, garam masala, amchur, and black salt, salt, pepper, and sugar.
Mix the mixture together till it forms a smooth paste.
Add the paneer cubes and toss it in the marinade coating each paneer well.
On a lined baking tray transfer each paneer cube making sure it’s coated well in the. marinade.
Brush some oil on each piece of paneer.
Bake in the oven at 425F for 25-35 mins. Flip it mid-way so both sides get cooked well.
Bread: Slice the bread loaf in half and place it on a baking tray.
Brush the open sides with melted butter.
Bake the bread for 5-6 mins or till the bread is almost toasted.
Take the bread out of the oven and layer the bottom part with cheese. Put it back in the oven and let it cook for another 3-4 mins or till the bread is fully toasted and the cheese has melted.
Once the paneer has cooked and the bread has toasted you can start assembling the sandwich.
Mix mayonnaise with the spicy maggi sauce and keep aside.
Assemble:
On the lower side of the bread with cheese, spread coriander chutney, and on the other side, spread the spicy mayo mix.
Over the cheese, flatten and place lettuce leaves.
Top with paneer cubes. I used about 6 cubes per sandwich
Top with slices of onions, bell peppers, and tomatoes.
Sprinkle chaat masala over the veggies.
Sandwich the two sides together, slice, and serve!
Pro tip: if you like sandwiches toasty, toast them in the air fryer for 3-4 mins after.
Serve warm with your favorite sides like fries, chips, and more!
Notes/Tips:
You can marinate the paneer cubes from before and keep them. The longer it marinates the more flavor the paneer gets but you can do it immediately as well!
You can make it with any bread, I feel it’s best on a soft and crispy Italian loaf.
The fresher veggies you use the better it is.
Make sure the paneer cubes are covered well with marinate while baking. Flipping it is important!
If you want, you can hollow out the bread.
