One Pot Tikka Masala Baked Pasta

The love for one pot pastas is real. Somedays its just needed, don’t hate me! When there is no time to cook or no energy it really comes to the rescue. SO i decided to make an Indian inspired one pot pasta and Oh My God it was mind-blowing! It is a fusion creamy saucy pasta recipe and not overpowering with tikka masala. This indulgent pasta recipe is so good! And my favorite part apart from the flavors are the bite from onions and the little spiciness from the chilis on top. This recipe is so easy and delicious its a must make, with Diwali coming the perfect time! I made this again recently when my best friend was over and she loveddd it! I hope you love it as much too!

Ingredients: 

  • 12 oz pasta

  • 5-6 oz cream cheese

  • 1/4 cup Tikka masala paste

  • 1/3 cup ketchup 

  • 1/3 cup tomato paste 

  • 2 cups milk

  • 1 cup water

  • 1/3 cup heavy cream 

  • 1.5 tsp ginger paste

  • 1 tbsp coriander chutney 

  • 1-1.5 tsp Salt

  • 1/4 tsp Pepper

  • 1 tsp Sugar 

  • 1/2 tsp cumin powder

  • 1/4 tsp garam masala

  • 1/2 tsp red chili powder

  • 4 cloves garlic finely shopped

  • 1/4th cup chopped onions 

  • 1/4 stick butter in thin slices

  • 1-1.5 cups mixed Italian/Mexican cheese

  • 2-3 finely sliced chili  

  • Chopped cilantro to garnish

Directions: 

  1. Preheat oven to 400F.

  2. In an oven safe dish place the cream cheese in the centre.

  3. Place the dry pasta around the cream cheese.

  4. Over the pasta top with tikka masala paste, tomato paste, ketchup, ginger, coriander chutney, water, milk and cream. Mix it together with the pasta not mixing in the cream cheese.

  5. Sprinkle salt, pepper, sugar, cumin powder, red chili powder and garam masala and mix, not mixing the cream cheese.

  6. Top the cream cheese with chopped garlic. Sprinkle onions over the pasta and do not mix.

  7. Slice the butter into thin slices and top over the pasta.

  8. Cover with foil and bake at 400F for 20 mins covered.

  9. Remove the cover, and mix the pasta, not the cream cheese. Put it back to bake at 400F for 20 mins.

  10. When out of the oven mix in the cream cheese and garlic with the pasta. Cover with shredded/sliced mixed cheese. Sprinkle chopped chili over it.

  11. Bake at 400F for 10-15 mins till the cheese melts.

  12. Sprinkle some chopped cilantro and serve immediately. Enjoy the cheesy spicy saucy goodness.

Notes/Tips:

  • Do not mix the cream cheese in the beginning until it roasted with the garlic.

  • Make sure the pasta is covered with liquid before baking.

  • I used store bought tikka masala paste, you can use homemade as well.

  • Make sure you cover the baking dish so it helps the pasta cook.

  • You can add the butter after the first round of baking as well. I prefer it in the first round as the instructions.
