One-pot Marinara Veggie Gnocchi

This is a delicious saucy tomato-based gnocchi with some garlicky mushrooms (you can add any vegetables you like). The cheese crust with the baked dollops of ricotta on top is perhaps my favorite part of this recipe, it just brings everything together! I love using skillet gnocchi- it’s crispier and not as soggy as regular gnocchi. You can make it in 20 mins which makes it perfect as a weekday meal. Kids love this recipe as well as adults. It is so flavorful and a must-try vegetarian pasta dish!

Ingredients: 

  • 1 tbsp Butter

  • 5-6 cloves minced Garlic

  • 8-10 white Mushrooms sliced

  • 1 tbsp oil

  • 400 g Gnocchi - i used skillet gnocchi, see notes

  • 1 cup marinara pasta sauce

  • 1/4-1:3 cup water

  • 2 tbsp chopped basil leaves

  • 2 tbsp chopped chives

  • 1/3 cup pecorino romano

  • 1/4 cup Italian cheese mix

  • 1/2 cup Ricotta cheese

Directions: 

  1. In a skillet add butter. Add the minced garlic and cook for 2-3 mins till fragrant.

  2. Add mushrooms and cook for 5-6 mins till the mushrooms are well cooked. Once they are well cooked, keep them aside in a bowl (unless you are using boiled gnocchi, check notes)

  3. If you are using skillet gnocchi- In the same skillet, add oil and add the skillet gnocchi. Cook it for 3-4 mins.

  4. Add the pasta sauce and water and cook it for 2-3 mins.

  5. Add the mushrooms, chopped herbs, spices and mix them together.

  6. Mix the pecorino with Italian cheese mix.

  7. Top it with cheese and dollops of ricotta and broil in the oven for 6-8 mins till the cheese is browned and ricotta cooked.

Notes/Tips:

  • If you are using regular gnocchi, boil it and keep it aside. Reserve 1/4 cup pasta water. Once mushrooms are cooked, add the pasta sauce ( don’t add water since you’ll add some pasta water, add water at the end if needed) and herbs, and cook for 2-3 mins. Add the boiled gnocchi and pasta water and mix together and then put cheese and broil.

  • Skillet gnocchi does not need to be boiled, just cook it in the skillet and it cooks in the pasta sauce.

  • Skip mushrooms if you want. you can add other vegetables if you like.

  • The ricotta dollops on top add a lot of flavor to the dish.

  • I have used both store-bought pasta sauce and homemade sauce for this recipe.

  • To make it vegan use vegan cheese on top and only cook in olive oil.

  • You can use any veggies you like.
