No-churn Eggless Peach Honey Granola Ice-cream
This is no-churn ice cream that is the perfect combination of peach honey and granola. It is so creamy and not overly sweet. This is a no-churn recipe so you do not need an ice cream machine just a whisk (preferably electric). I love peach and ice cream so I had to make this flavor. The crunch from the granola is one of my favorite parts. I love the swirled in peach puree and I hope you love it too! a delicious ice cream to make during Peach season or use tinned peaches because yes to peaches year-round.
This is so easy to make and super quick. Just 20 mins and then let your freezer do all the work!
Happy Baking!
Servings: 6-8 servings
Prep Time: 20 mins
Chilling Time: 4-5 hours
Total Time: 5-6 hours
Ingredients:
500g heavy whipping cream
2 tsp Vanilla
2 tbsp honey
2 tbsp sugar
12 oz unsweetened Evaporated milk
2/3 cup 70g Honey Granola or granola of your choice
130 oz sweetened Peach puree- check notes
1/2 -3/4 cup Peach pieces- fresh or tinned.
Directions:
In a bowl add heavy cream and sugar. Whisk it together using an electric/stand mixer.
When the cream starts thickening add vanilla essence and honey. Whisk till medium-firm peaks form. Do NOT over whisk.
Add evaporated milk and whisk together till just combined.
Add peach pieces and granola and gently fold them together.
Transfer to a bowl/dish (freezer-safe) of your choice.
Pour peach puree over it and swirl it in using a knife. Do not over swirl so that it disappears.
Top with some more granola for presentation.
Freeze for 4-5 hours. Ideally, let it freeze overnight.
Scoop and serve!
Notes/Tips:
You can use store-bought or make your own peach puree. I made my own peach puree. I blended tinned peach slices with 2-3 tsp of the syrup in the can till smooth.
I used evaporated milk because it has less water content so it is less icy. Evaporated milk is a replacement for evaporated milk.
Do not over whisk the heavy cream. If you over whisk it, it’ll become too gritty and won’t have a melt in mouth texture. It needs to be soft and fluffy. So just whisk till medium-firm peaks.
Use any granola of your choice. You can add some toasted almonds and walnuts to it as well.
