Mediterranean Lavash Flatbread Pizza

Bringing you this Mediterranean lavash flatbread pizza, if you like hummus, thin-crust, and cheese, this is right up your alley! It brings together two of my favorite cuisines, Mediterranean and Italian. The Za’atar spices paired with the halloumi and mozzarella cheese are just mind-blowing, seriously trust me!! The honey/agave on top takes it to the next level. It is also super healthy and quick to make, you can have it ready in 30 mins which makes this the perfect lunch. It is a perfect recipe to make with your kids, they can add whatever toppings they like and will love it. I can’t wait for you to try this and tell me how much you love it!!

Servings: 2-4 servings

Total Time: 30 mins

Ingredients: 

  • 2 lavash flatbreads

  • 1/2-2/3 cup halloumi grated

  • 1/2 cup mozzarella grated

  • 1 tbsp Za’atar powder

  • 3/4 cup roasted red pepper hummus or hummus of your choice

  • Vegetables of your choice- Onions, Capsicum, Chopped garlic, Scallions, corn, etc

  • 1.5 tbsp oil

  • 1-2 tsp chili flakes

  • 1-2 tsp honey/agave

Directions: 

  1. Preheat the oven to 375F.

  2. Lightly toast lavash flatbread for 2 mins.

  3. Mix the cheeses with Zataar seasoning.

  4. In a food processor add the hummus. Add 1 tbsp of the olive oil and chili flakes (unless you don’t like spice) This helps make it creamier. You can even add 1/2 tbsp yogurt.

  5. Spread out the hummus between the flatbreads.

  6. Sprinkle cheese mixture over the hummus.

  7. Add the veggies of your choice including chopped garlic over the cheese.

  8. Bake it for 5-8 mins at 375F till the cheese melts and the flatbread is crisp. I added some basil leaves when 2 mins were left.

  9. Drizzle the honey/agave over it.

  10. Cut and serve.

Notes/Tips:

  • Make your own hummus or use store-bought hummus. I like using roasted red pepper hummus because it adds more flavor. I have a recipe for homemade hummus here.

  • Use any veggies you like, Onions, Capsicum, Chopped garlic, Scallions, corn, etc. If you use veggies like mushrooms you should cook them before adding.

  • Don’t skip the sweetener, trust me it takes it to the next level.

  • Cheeses- If you don’t have mozzarella you can use an Italian mix of cheese or Amul cheese. I would recommend using Halloumi cheese but if not, use mozzarella or the ialtian blend. Don’t skip the Za’atar seasoning.

  • Vegan- Use a vegan cheese to make it Vegan.
