Spice Up Your Meal Prep: Vegan High Protein Chili Oil Noodles

Ingredients: 

  • 8-10 oz noodles of your choice

  • 8-10 oz extra firm tofu

  • 1/2-1 cup edamame

  • 3 scallions; just greens

  • 2 tsp dark soy

  • 3-5 tbsp chili oil

  • 4-5Tbsp noodle water

  • 1-2 tsp Salt as per taste; divided

  • 1/4 tsp Pepper

Directions: 

  1. Tofu: Preheat an oven or air fryer. Airfryer at 400F and oven at 425F.

  2. In a bowl crumble tofu till it is fine. Add salt to season and 1 tbsp of chili oil. Mix it well.

  3. Cook in the air fryer/ oven for 8-12 mins, giving it a toss midway. It should be golden brown and crispy.

  4. Boil noodles and edamame as per packet instructions. Strain and keep them aside. Make sure to save the noodle water.

  5. In a bowl add tofu, scallions, boiled noodles, edamame, soy sauce, and 3-4 tbsp of hot chili oil. When adding chili oil add oil and then aromatics and spices.

  6. Add 2-3 tbsp of noodle water.

  7. Mix everything till combined well. Add more noodle water if needed.

  8. As per taste add the salt, and if needed more chilli flakes.

  9. Serve warm or cold!

Notes/Tips:

  • You can use any noodles you like. I like chow mein or lo-mein noodles

  • Use the chili oil recipe linked above for the best flavor!

  • You can meal prep the tofu and keep it.

  • The warm chili oil helps mix it better and enhance flavor.

  • You can cook everything together in a wok/pan.
