French onion Bread Pockets

French onion Bread Pockets are toasty bread pockets filled with the most flavorful caramelized onions and cheese mixture! Think of it as an updated grilled cheese! These can be made in an air fryer or oven, though I prefer the air fryer for this! Its so delicious and a perfect snack for kids and adults. It works great to send as a lunch box snack or even for movie nights to game day. You cannot go wrong with bread, cheese and caramelise onions and add crispy to the mix and its a superhit! I love serving this with a garlic dipping sauce to for that kick!

Servings: 5-6 pockets

Prep Time: 30 mins

Cooking Time: 30-40 mins

Total Time: 1-1.5 hours

Ingredients: 

  • 1.5 tbsp butter

  • 3 cups thinly sliced yellow onions

  • 2 cloves garlic minced

  • 1/2-1 tsp chili flakes

  • Salt as per taste

  • 1 veg bouillon cube; optional- check notes

  • 1/4 tsp pepper

  • 2 tbsp water or veg stock

  • 2 tbsp freshly chopped sage leaves

  • 1/2 cup mozzarella cheese grated

  • 1 cup gruyere cheese grated

  • 10-12 soft sandwich bread slices

  • 1/3 cup milk

  • Butter spray or melted butter to brush

  • Garlic dipping sauce or chili sauce to serve with

Directions: 

  1. Prepare the chili garlic dipping sauce at home if you want. Click here for the recipe.

  2. In a pan on low heat, add butter.

  3. Once it starts to melt, add sliced onions and cook it.

  4. Cook on low heat for 15-20 mins till the onions start caramelising.

  5. Once it starts caramelising, add the bouillon cube, chili flakes, salt, pepper and cook for 2-3 mins.

  6. Add veg stock/water to deglaze the pan and cook for another 3-5 mins. The onions should be soft and have a light caramelized flavor.

  7. Add chopped sage leaves and cook for 2-3 mins. Keep aside.

  8. Grate and mix cheese and keep aside.

  9. Preheat your air fryer or oven to 400F.

  10. Using a rolling pin, gently roll out the slices of bread.

  11. On half of them, place about 2.5 -3 tbsp of the onion filling and top about 2-3 tbsp cheese.

  12. Brush milk along the edges of the bread.

  13. Place one of the rolled out bread over the topped bread and press down the edges.

  14. Using a fork crimp down the edges to hold the pockets together.

  15. Using a knife, make a small x on top of the bread packet. This helps the cheese to melt inside.

  16. Brush or spray butter over the pockets.

  17. Cook at 400F in a preheated air fryer or oven for 5-6 mins till brown and toasty. Check notes.

  18. Serve immediately with the sauce and enjoy!

Notes/Tips:

  • Cooking the onions on low heat for a longer time is key!

  • Bouillon cube is a cube of dehydrated stock which helps to add flavor. I use the on Maggi company makes which I find in Indian stores. You can skip it. If you do use veg stock instead of water in thr recipe.

  • If the bread tears when assembling, don’t worry! It won’t be really visible when it cooks.

  • I like to spray butter rather than brush butter before cooking. It helps with an even cook throughout!

  • I prefer cooking it in an air fryer to get it more toasty! If you use an oven it will take longer than it does in an air fryer.
