Everyday Vegetarian Salad

Ingredients:
Salad:
3-5 oz baby arugula
1/4 cup sliced yellow onions
1/3 cup chopped cucumbers
5-6 grape/cherry tomatoes sliced
1/4 cup blueberries
Dressing:
2 tbsp extra virgin olive oil
1.5 tsp balsamic vinegar
Juice of 1/2 lime
1/4 tsp maple syrup
Salt as per taste
1/2 tsp chili flakes
A pinch of pepper
Top with:
2 tbsp chopped Walnuts
1/4 cup Croutons
Parmesan cheese shavings
OR use a savory nut crunch bar (like in the video)
Directions:
Dressing: In a bowl add all the ingredients for the dressing and mix.
In a bowl, add the greens and vegetables and mix. Add dressing as you like and mix.
Top with nuts, and croutons. Garnish with some cheese shavings.
Serve immediately and enjoy!
Notes/Tips:
You can add any vegetables you like to the salad. You can add roasted veggies or fresh.
Fruits- Fresh berries work perfectly in this recipe. You can add peach slices or grapes too.
Greens- Use any salad leaves of your choice. Kale by itself can make it too bitter in this salad but you can add a bit in.
Dressing- If you don’t like the hint of spice, skip adding the dried chili. This dressing lasts well in the fridge for 1 week.
