Enchilada Bean & Veggie Sliders- a delicious Mexican Slider recipe

Ingredients: 

Filling:

  • 1.5-2 cup refried beans

  • 1/2 cup corn kernels

  • 1/2 large red onion cut into slices

  • 1/2 bell pepper cut into slices

  • 3/4-1 cup shredded slaw mix 

  • 4-6 Cheese slices- I used pepper jack

  • 1/2-3/4 cup shredded cheddar cheese


Creamy hot sauce:

  • 2-3 tbsp hot sauce of your choice

  • 1/4-1/2 cup mayonnaise

Butter Mixture:

  • 1/2 stick of unsalted butter

  • 1/2 tbsp everything bagel seasoning

  • 2 tsp red chili flakes

  • 1 tbsp brown sugar 

  • 1.5-2 tbsp enchilada sauce; I used red

Assembly:

  • 1/3-1/2 cup enchilada sauce; i used green

  • 12 Savory butter slider buns

Directions: 

  1. Creamy Hot sauce: Mix the hot sauce and mayonnaise and keep aside

  2. Preheat the oven to 375F.

  3. Assembly: Assemble the buns on a parchment-lined baking tray to make it easier.

    1. Slice slider buns horizontally in half.

    2. On the bottom half of the buns spread the enchilada sauce

    3. Layer with shredded slaw

    4. Top it with cheese. I used cheddar cheese for this layer.

    5. Layer beans over the cheese. I like a thick layer of beans

    6. Top it with the corn, onions, and peppers.

    7. Layer with the second layer of the cheese slices over it. I used pepper jack for this.

    8. Spread the creamy hot sauce on the top part of the slider buns.

    9. Sandwich the slider buns over the cheese slices.

    10. Using a toothpick poke holes in the slider buns. be sure to get all the buns all over.

    11. Butter mixture- Melt butter and mix brown sugar, everything bagel seasoning, and red chili flakes. Mix well.

    12. Pour the butter mixture over the buns and spread it all over.

  4. Cover the buns with foil and bake for 15 mins at 350F for 30-40 mins. The base should be slightly crispy.

  5. Let it rest for 3-5 mins once out of the oven.

  6. Remove the foil, cut, and serve.

  7. You can serve these with any condiments you like, like sour cream and salsa, but it’s not needed as these are saucy themselves.

Notes/Tips:

  • Use savory slider buns. Sweet buns can make this recipe too sweet. If you use the sweet slider buns, skip the sugar!

  • Ideally, use two different kinds of cheeses. I like the combination of cheddar and pepperjack but you can use any.

  • Do NOT forget to poke the holes in the slider buns.

  • Covering with foil is a must.

  • You can make the sauces and bean filling from before and keep them.

  • I used a homemade retired beans filling, you can use canned refried beans if you like it.
