Eggless Orange biscuit Pudding

Eggless orange biscuit pudding is a delicious 5 ingredient dessert. The layers are a sweet coconut biscuit layered with a orange mousse and fresh fruit garnished with some fresh cream and chocolate shavings. I have been making this dessert for years (12 years+) and it is always a super hit! This dessert leaves you with a freshness in your mouth and always wanting more. I made these with blood orange but these are perfect with ANY orange. This dessert can be made without any added sugar. You can make these as single servings or set it in a bigger bowl. It looks so beautiful which is just the cherry on top.

Servings: 6-7 servings

Cooking Time: 20 mins

Chilling Time: 2-3 hours

Total Time: 3 hours

Ingredients: 

  • 140ml freshly squeezed orange juice, I used blood orange

  • 1 tsp/5g corn starch

  • 1 cup/240 ml heavy cream

  • 180g-200g Britannia Nice biscuits or Marinela Caribenas coconut cookies

  • 1-2 tbsp sugar; based on orange sweetness; I used 1.5 tbsp

  • 1 tsp vanilla essence

  • 1/4 cup milk

  • 1/2 cup fresh orange pieces

  • Chocolate shavings, orange slices and whipped cream to garnish

Directions: 

  1. In a pan add orange juice on low flame.

  2. Once it comes to a low boil add the cornstarch and whisk it all together. Whisk it till combined. If there are any amps pass it through a sieve.

  3. Cook it on a low flame for 1-2 mins till it thickens slightly. Keep aside and let it cool slightly.

  4. Whisk heavy cream in an electric/stand mixer.

  5. Add sugar and vanilla essence.

  6. Whisk together till medium peaks on medium speed. It should take 2-3 mins.

  7. Add 2-3 tbsp of the whipped cream to the cooled orange mixture. Mix it together till combined.

  8. Add the orange cream mixture to the whipped cream and gently fold it together till combined.

  9. Crush biscuits for layering.

  10. Layering-

    • Layer with the biscuits.

    • Pour milk over the biscuit layer till slightly damp.

    • Layer with the orange mousse.

    • Layer with fresh orange pieces.

    • Repeat layers of biscuit soaked with milk and orange mousse.

  11. Garnish with whipped cream, orange slices and chocolate shavings.

  12. Chill for at least 2-3 hours. Take it out of the fridge 30 mins before serving.

Notes/Tips:

  • I do not recommend using other biscuits because these biscuits have sugar on it and a slight coconut taste which brings everything together. Nice biscuits are easily available in any indian grocery store.

  • Make sure you sieve the orange mixture if there are any lumps.

  • Let the orange mixture cool before adding it to the whipped cream. Be gentle while folding, you do not want to deflate it.

  • Do not over whip the cream. It will be very grainy and thick if you over whip it. If it is over whipped, remove 1/4 cup of the whipped cream and add 1/4 cup cream (without whisking) and fold it in.

  • Do not forget the milk otherwise the biscuit layer can be dry.

  • Be sure to take it out 20-30 mins before serving so that the mousse layer becomes softer.
