Vegan Easy & Umami Sesame Noodles

Ingredients: 

  • 2 tbsp sesame oil

  • 1 tsp chili flakes

  • 4-6 medium cloves of garlic grated

  • 1/4 inch ginger grated

  • 2-3 scallions chopped

  • 3-4 oz spinach leaves; I used baby spinach

  • 1 tbsp thick dark soy sauce and 2 tbsp light soy sauce OR 1.5 tbsp thin dark soy sauce

  • 3 tbsp tahini

  • 1/2 tbsp sriracha

  • Salt as per taste

  • 1/8 tsp black pepper paste

  • 1/4 tsp sugar

  • A pinch of Ajinomoto; optional

  • 8-10 oz ramen noodles

  • 3-4 tbsp noodle water

Directions: 

  1. Boil noodles till al dente and keep aside. Reserve some of the noodle water.

  2. Put a pan/wok on low-medium heat.

  3. Add oil and once warm add chili flakes, minced garlic & ginger, and chopped scallions. Cook it for 3-4 mins till fragrant.

  4. Add spinach leaves and cook them for 2-4 mins till they’re wilted and everything is well cooked.

  5. Add the sauces- soy, tahini, sriracha, and seasonings- salt, pepper, sugar, and Ajinomoto and cook for 2-3 mins. The oil may separate from the tahini but don’t worry that’s fine.

  6. Add the noodles and noodle water and toss them in. Cook for 3-4 mins till tossed and mixed well.

  7. Garnish with some scallion greens and chili flakes.

  8. Serve and enjoy! These noodles taste amazingly hot and even cold.

Notes/Tips:

  • You can add any veggies to this dish.

  • Don’t overcook the sauce as it can become too dry.

  • If you feel the noodles are too dry add more noodle water.

  • If you can’t find ramen noodles you can use any noodles you like.
