Cheesy Sweet Potato Phyllo cups
Perfect appetizers for fall, these Cheesy Sweet Potato Phyllo cups are so cozy and delicious. A creamy filling made with sweet potato and feta to balance the flavors in a crispy phyllo shell makes these a perfect bite. The Zaatar seasoning and olive bits really bring it all together. So easy to make and so delicious, these appetizers are literally inhaled. They work great on a charcuterie board or for when you have guests over.

Ingredients:
1 roll - 8 oz Phyllo sheets
1 tbsp olive oil
1/3 cup chopped red onions
1 cup boiled and mashed sweet potato
1/4 cup Crumbled Feta
2-3 cloves garlic minced
2 tbsp chopped fresh Parsley
1/3 cup Cream cheese at room temperature
2 tbsp chopped Pitted black Olives
1 tsp Salt as per taste
1/4 tsp Pepper
1.5 tsp red chili flakes, divided
2 tsp Zaatar, divided
1/4 cup shredded mozzarella cheese
2-3 tbsp melted Butter
Directions:
In a pan add olive oil. Add chopped onions and cook for 3-4 mins.
Add minced garlic and chopped olives and cook for 2-3 mins.
Add mashed sweet potato and mix it well. Cook for 2 mins.
Add 1 tsp Zaatar seasonings, salt, pepper, 1 tsp of chili flakes and chopped parsley.
Cook the mixture well for 4-5 mins till it’s thickened and the water from the sweet potato has evaporated. Let it cool for 5-10 mins.
Add the crumbled feta and cream cheese and mix it together till the mixture comes together.
Preheat the oven to 375F.
Mix melted butter and 1 tsp of Zaatar seasoning and .5 tsp of red chili flakes.
Cut the phyllo sheets in about 3-4 inch squares.
Brush a cupcake tray with Zaatar butter. In each cupcake hollow place about 5-6 of the cut squares pressing down to form a cup. Brush some of the Zaatar butter over the phyllo sheets. - see video
Fill each of them with the cooled sweet potato mixture. Sprinkle some of the mozzarella cheese over it.
Bake at 375F for 10-12 mins till the phyllo sheets is golden brown.
Serve immediately. Pairs well with a chili sauce.
Notes/Tips:
Ideally boil and mash fresh sweet potato and not from a can. The flavor will be very off.
You can use pre made phyllo shells if you want. They will make almost double the quantity.
If you don’t have Zaatar seasoning use a mixture of toasted sesame seeds and oregano.
Make sure the sweet potato mixture is cooked enough and the water is cooked off.
Do not skip the feta as it balances the sweet Potato.
You can skip the olives if you like. It’s not an overpowering flavor. I am not a huge fan of Olives but I love the subtle flavor with sweet potatoes.
