Ingredients:
Peri Peri Veggies:
1 big onion (ideally yellow or white) cut into thin slices
1.5 lb baby potatoes (cut into thin slices after soaking)
1 cauliflower head cut into small pieces
6 oz peri-peri sauce; I used Nandos medium
2 tbsp olive oil
1 tsp Garlic powder
1/2 tbsp Chili flakes
1-2 tsp Salt as per taste
1 tsp sugar
1 tsp pepper
1 tsp oregano
1 tbsp paprika
Butter Mixture:
6-8 tbsp unsalted butter
1 tbsp everything bagel seasoning
1/2 tbsp chili flakes
2 tbsp peri peri sauce
1 tsp brown sugar
1/2 tsp pepper
1/2 tsp oregano
Assembly:
1-1.5 cups shredded slaw mix
10-12 Cheese slices- I used pepper jack cheese
1-1.25 cups shredded cheddar cheese
1/3-1/2 cup mayonnaise
1/4-1/3 cup peri peri sauce
24 Savory butter slider buns
Directions:
Peri-peri Veggies: Soak potatoes in cold water for 30 minutes. Drain and let it dry. Then cut it into thin slices.
Preheat oven to 400F. Line a sheet tray with parchment paper.
In a large mixing bowl add potatoes, cauliflower, and onions. Add all the seasonings and sauces- olive oil, peri peri sauce, garlic powder, salt, pepper, chili flakes, paprika, oregano, and sugar. Give it a toss till everything is coated well.
Transfer the veggies to the tray and put the tray for the vegetables to roast in the oven. Let it cook for 35-45 mins, giving it a toss midway.
Once it is out of the oven, let it cool for 10 minutes for assembling sliders.
Reduce oven temp to 375F for baking sliders
Assembly: Assemble the buns on a parchment-lined baking tray to make it easier.
Slice slider buns horizontally in half.
On the bottom half of the buns spread the peri peri sauce.
Top it with shredded slaw mixture.
Layer with cheese slices.
Top it with the roasted veggies.
Layer with cheddar cheese.
Spread mayonnaise on the top part of the slider buns.
Sandwich the slider buns over the cheese.
Using a toothpick, poke holes in the slider buns. Be sure to get all the buns all over.
Butter mixture- Melt butter and add sugar, everything bagel seasoning, salt, peri-peri sauce, oregano, and chili flakes. Mix well.
Pour the butter mixture over the buns and spread it all over.
Cover the buns with foil and bake for 15 mins at 375F and then 15-20 mins at 350F. The base should be slightly crispy.
Let it rest for 3-5 mins once out of the oven.
Remove the foil, cut, and serve.
You can serve these with any condiments if you like.
Notes/Tips:
Soaking the potatoes helps to remove the starch and cook better in the oven.
I used a medley of baby potatoes but you can use regular or any kind of baby potatoes you find. If you cant find baby potatoes cut gold potatoes into thin and small slices.
You can roast the vegetables from before and keep them.
Use savory slider buns. Sweet buns can make this recipe too sweet. I used Kings Hawaiian Savory rolls for this recipe.
Let the veggies cool before layering or it can make the sliders soggy.
You can use two different kinds of cheeses. I like the combination of cheddar and pepperjack but you can use any you like.
Do NOT forget to poke the holes in the slider buns.
Covering with foil is a must.
