Servings: 10-12 servings

Ingredients: 

  • 1 roll/8 oz phyllo 

  • 1 stick/114g butter, melted

  • 2 cups grated mozzarella cheese

  • 6 oz feta cheese crumbled

  • 1 cup white cheddar/pepper jack/swiss cheese grated

  • 5-6 scallions chopped

  • 1 tbsp olive oil

  • 3-4 garlic cloves of garlic finely chopped

  • 9 oz spinach ( I used baby spinach)

  • 2 tbsp chopped parsley leaves

  • 1/2 tsp salt as per taste

  • 1/2 tsp cumin powder

  • 1/2-1 tsp red chili flakes

  • 1/4 tsp pepper

  • 1/4 tsp sugar

Topping:

  • 2 tbsp za'atar seasoning

  • 1/2-1 tbsp red chili flakes

  • Honey to serve with

  • Spicy sauce to serve with

Directions: 

  1. Preheat oven to 350F.

  2. While the oven preheats, put a pan on low-medium heat.

  3. Add olive oil and when warm add garlic. Saute for 5-6 mins till it starts to get brown. Once it’s brown add spinach leaves, chopped parsley, and spices (salt, pepper, salt, chili flakes, and cumin) and saute.

  4. Cook for 1-2 mins until the leaves have wilted and remove the heat. Keep aside.

  5. In a baking dish ( I used a 5*12 dish) brush little butter on the base.

  6. Crinkle a sheet of phyllo and spread and place them in a baking pan. Cover the base of the baking pan with crinkled phyllo sheets. For each layer, I used about 5-7 sheets of phyllo.

  7. Brush melted butter over the Phyllo layer.

  8. Spread half of the mozzarella cheese and cheddar cheese over the phyllo.

  9. Top the cheese with half of the chopped scallions.

  10. Top the scallions with another layer of crinkled phyllo. Always use a single sheet to kind of smush and crinkle it.

  11. Brush melted butter over the Phyllo layer.

  12. Top the phyllo sheet with the spinach mixture spread out evenly.

  13. Sprinkle crumbled feta cheese over the spinach.

  14. Top the feta with another layer of crinkled phyllo.

  15. Brush melted butter over the Phyllo layer.

  16. Spread the remaining half of the mozzarella cheese and cheddar cheese over the phyllo.

  17. Top the cheese with the remaining half of the chopped scallions.

  18. Top the scallions with another layer of crinkled phyllo.

  19. Brush melted butter over the Phyllo layer.

  20. Sprinkle za’atar and red chili flakes over the phyllo all over the top.

  21. Bake at 350F for 35-45 mins till it is cooked through and golden brown all over.

  22. Let it cool for 3-5 mins and then cut and serve.

  23. You must drizzle honey and serve it with a spicy sauce of your choice to complete it.

  24. Enjoy warm!

Notes/Tips:

  • Keep phyllo sheets covered when not working with them or they will dry out.

  • You can prepare the layers in the baking dish and keep it ready from before. Keep it covered well in cling wrap in the freezer so it doesn’t dry out for up to 2 weeks. No need to thaw. The baking temperature will be 370F for 18-22 mins and then 350F for 20-25 mins.

  • Only use one sheet when smushing/crinkling. For each layer, I used about 5-7 sheets of phyllo.

  • Make sure each layer of phyllo is brushed well with butter s it cooks in the oven.

  • Zaatar is a must!! If you don’t have zaatar mix together cumin powder, red chili powder, coriander powder, and dried oregano with toasted sesame seeds.
