Happy Cooking!

Servings: About 25 pieces

Prep Time: 15-20 mins

Cooking Time: 30-40 mins

Baking Time: 15-20 mins

Total Time: 1-1.5 hours

Ingredients:

For the Caramelized Onions:

  • 2 large red onions thinly sliced

  • 1 tbsp olive oil

  • 1/2 tbsp avocado oil

  • 1/2 tbsp garlic powder

  • 1-1.5 tbsp chili flakes; as per taste

  • 1-2 tsp Salt to taste as per taste

  • 1/2 tsp sugar

  • 1/2 tsp pepper

To assemble:

  • 1 sheet puff pastry (about 8 oz), thawed

  • 3-4 oz goat cheese

  • 2-3 twigs of thyme leaves

  • About 2 tbsp Honey to serve

  • Avocado/Olive oil to spray/brush

Directions:

  1. Caramelized Onions- Heat olive oil & avocado oil in a pan on low heat. Add the onions and cook them until they start to caramelize. Keep stirring them in intervals so that they do not burn. Make sure the flame is low. In about 20 minutes, the onions should be light brown.

  2. Add the garlic powder, chili flakes, salt, sugar, and pepper. Mix it well and cook on low for 15-20 minutes.

  3. The onions should be caramelized well by now. Let it cool.

  4. Assembly: Preheat the oven to 400F.

  5. Gently roll out the puff pastry dough. You don’t want it too thin.

  6. Use a pizza cutter and cut it into 25 pieces.

  7. Place each piece in a slightly greased cupcake tray. Gently press down in the center to form the shape. Use a fork and poke holes in the center of each piece. This will prevent the center from puffing up while the two edges puff up. Spray/brush a little oil over the puffs.

  8. In the center fill about 1-1.5 tbsp of caramelized onions. Top it with about 1.5 tsp of goat cheese. Top it with a small piece of thyme. Spray/brush a little oil over the puffs.

  9. Bake at 400F for 17-22 mins till the puffs are golden brown and the cheese has melted and slightly browned. Rotate the tray midway.

  10. Once out of the oven, let it cool for 5 minutes. Drizzle honey over it.

  11. Serve warm & enjoy!

Notes/Tips:

  • You can make the caramelized onions and keep them from before.

  • My favorite puff pastry brand is Pepperidge Farm.

  • You can use brie instead of goat cheese.

  • You can use spicy goat cheese if you want.

  • Don’t skip the thyme!

  • I like to use red onions instead of white for this recipe for a kick to balance the goat cheese.

  • Reheat- I reheated puffs in the air fryer at 375 for 3-5 mins. I stored them in an airtight box.
