Burrata French Onion Pasta
Burrata French Onion Pasta is my take on the TikTok viral French Onion pasta. This recipe is dedicated to my sister who introduced me to French onion soup by making the most delicious one when I was a kid. This pasta has caramelized onions, mushrooms, and so much flavor! Then it’s topped with burrata cheese and breadcrumbs to give the cheesiness and the bread texture in a french onion soup. The balance of all the flavors is just amazing in this recipe and it’s so cozy making it a perfect winter recipe you need to try. Without the cheese, the recipe is Vegan, you can use vegan burrata or any creamy vegan cheese you like instead.

Ingredients:
14-16 oz Pasta of your choice - I used Cascatelli
2-3 tbsp bread crumbs- you can use plain or Italian herbed
1.5-2 tbsp olive oil
3 large yellow onions thinly sliced
6-8 mushrooms sliced
5-6 garlic cloves minced
1 tsp Salt as per taste
1/4 tsp Pepper
1/2-1 tsp Chili flakes
1/2 tsp Oregano
1/8 tsp Nutmeg/ajwain
1 bouillon stock cube
3 tbsp chopped Basil
1 tbsp chopped Parsley
3/4 cup pasta water
1/2 tbsp Balsamic vinegar
8-16 oz Burrata or Stracciatella di bufala cheese
Directions:
Put water to boil in a saucepan with salt and let it come to a boil. Boil pasta of your choice till al dente. Keep aside and reserve pasta water. I personally like to start boiling the pasta once the onions start caramelizing so I can directly put the boiled pasta in the pot and not let it sit.
In a saute pan on low-medium heat, add olive oil.
Add sliced onions and cook for 8-12 mins till the onions start to caramelise. Stir frequently to prevent it from burning.
While the onions are caramelizing, I like to toast the breadcrumbs. Put a small state pan on low heat and add the breadcrumbs. Dry roast it for 3-5 mins till it is golden brown.
Once the onions have started to caramelize, add the minced garlic, sliced mushrooms, bouillon stock cube, and all the spices- salt, pepper, chili flakes, oregano, and nutmeg.
Saute it for 5-7 mins till the mushrooms are cooked through properly and the garlic is fragrant.
Add chopped parsley and basil leaves and cook for 2-3 mins till it’s all combined well.
Add 3/4 cup pasta water and let it cook for 1 minute mixing well.
Add boiled pasta and toss it together. Cook for 2-3 minutes till the pasta is well coated. Add more pasta water if needed.
Mix in the balsamic vinegar and take it off the flame.
Top the pasta with burrata cheese or Stracciatella di bufala and the toasted breadcrumbs.
Mix it well while eating and enjoy!
Notes/Tips:
You can use any pasta I recommend any medium-sized pasta.
Make sure the onions are caramelised well to bring out the sweetness.
If you like it creamy, add some heavy cream along with pasta water.
The bouillon stock cube adds flavor so do NOT skip it!
You can use white or Bella mushrooms.
Stracciatella di bufala is the inside creamy part of burrata.
You can use truffle burrata if you want.
You can use vegan burrata or any creamy vegan cheese you like instead.
