Burrata Corn Toasts with Pesto

These Burrata Corn Toasts with Pesto are a must-try summer appetizer. Crispy bread topped with a creamy burrata, buttery corn, and pesto, these are soo delicious. All the flavors work so well together and nothing over-powers each other. It’s all subtle flavors but so explosive together. They are so easy to make and you can prep a lot from before. A delicious appetizer for summer and to add on to any board you like! These are perfect for any get-togethers or any party. You can make them bite-size also. You need to try how delicious these are!

Ingredients: 

  • 6-8 slices of bread; I used sourdough

  • 1-2 tbsp olive oil or olive oil spray, I use chili olive oil

  • 1 tbsp butter

  • 2/3 cup corn kernels

  • 1/4 tsp black pepper

  • 1/2 tsp chili flakes

  • 4-6 oz burrata

  • 1/4-1/3 cup heavy cream

  • 2-3 tbsp basil pesto

  • Microgreens or parsley leaves to garnish


Directions: 

  1. Preheat the oven to 375F.

  2. Prepare pesto and keep aside. You can use store-bought if you like, if you want homemade (i recommend), click here for the recipe.

  3. On a baking tray, place sliced bread and drizzle/spray olive oil over it.

  4. Bake for 7-9 mins, flipping it mid-way till toasty.

  5. On a pan on low heat add butter.

  6. Add corn, pepper, and chili flakes and toss it well. Cook for 1-2 mins and keep aside.

  7. Put the burrata in a bowl and cut it open.

  8. Using a fork, shred the burrata. Add heavy cream and mix till incorporated.

  9. Layer the burrata on top of the toasts and then top with corn.

  10. Drizzle some pesto on top of the corn.

  11. Garnish with microgreens or parsley.

  12. Serve immediately!

Notes/Tips:

  • Use any bread that would crisp up well.

  • You can prepare the corn and pesto and keep them ready.

  • Top the bread when ready to serve as it can get soggy.

  • You can make these smaller as bite-size crostinis.

  • Using forks helps shred the burrata well.

  • Adding cream helps get more burrata and makes it creamier. IF you are able to get a very creamy burrata you may not need to add cream.
