Burrata Arugula Tomato Sandwich

Introducing you to a vegetarian BAT sandwich instead of the classic BLT. When I moved to USA, I realized the BLT (Bacon, lettuce, tomato) is the most popular sandwich. So this is me creating a BAT sandwich which according to me is more delicious (not that I’ve tried a BLT but anything with burrata is always better) inspired by a Caprese sandwich. I took that as a foundation and created something that’s so full of goodness with a layer of arugula, cooked tomato layer, burrata, french fries and a drizzle of hot honey over it. The herb oil is just a burst of flavor in every bite! This sandwich makes a delicious meal and you and your family will love it!

Servings: 3-4 servings

Ingredients: 

Tomato Layer:

  • 1/2 tbsp olive oil

  • 3 medium Roma Tomatoes finely chopped

  • 1 medium Red Onion finely chopped

  • 2 tbsp Basil Pesto  

  • 1-2 tsp Sugar 

  • 1/2 tbsp vinegar 

  • 1-2 tsp salt 

  • 1/4 tsp pepper

  • 1/2 tsp chili flakes

  • 1/2 tbsp oregano 

  • 1 tbsp Sriracha

  • 1/3-1/2 cup water

Herb Oil:

  • 3/4 cup chopped herbs - parsley, chives, and basil

  • 1.25-2.5 cups good EVOO

  • 2-3 cloves garlic minced

  • A pinch of salt

Assembly:

  • 14-16 oz Sourdough loaf or any bread you want to use

  • 4-5 tbsp Herb oil 

  • 1.5 cups (baby) Arugula; about 1 oz

  • 4 oz Burrata cheese

  • 3-4 oz French fries; I air fried frozen french fries

  • 2 tbsp honey, I used desi hot honey

  • Microgreens, optional


Directions: 

  1. Tomato Layer:

    1. Put a pan on low-medium heat and add olive oil to it.

    2. Add onions, tomatoes, and pesto and cook for 5-8 mins till it breaks down.

    3. Add salt, pepper, sugar, chili flakes, oregano, vinegar, and sriracha, and cook for 3-4 mins.

    4. Add water and mix. Cook it down for 10-12 mins till it thickens.

    5. Keep aside and let it cool.

  2. Herb Oil:

    1. Chop all herbs into small pieces.

    2. In a bowl add extra virgin olive oil, herbs, minced garlic, and salt.

    3. Mix well and keep aside.

  3. Assembly:

    1. Slice the bread loaf horizontally.

    2. Spread some of the herb oil over the slices and bake them in a griller or oven till as crispy as you like.

    3. Once warm, top with arugula.

    4. Spread the tomato layer over it.

    5. Layer french fries over the tomatoes.

    6. Cut and tear burrata and spread it over the fries.

    7. Drizzle honey over the burrata and top with micro greens if you want.

    8. Sandwich with the other slice and press down.

  4. Slice and serve!

Notes/Tips:

  • You can use any bread you want, I recommend any loaf and not presliced bread. The filling is thick so thin slices can make things fall out.

  • I used thin french fries and air fried as per package instructions. You can use any french fries or potato wedges.

  • Microgreens add a subtle flavor but you can skip it.

  • I recommend using the hot honey but you can use whatever you want.
