Best Edamame Hummus

I love the flavor of edamame and I feel we don’t use it enough. This edamame hummus is so delicious and full of flavor. It’s made with the basic ingredients of hummus without the chickpeas though. For anyone who can’t digest chickpeas well this is a MUST TRY, not that it’s not for anyone else. So funny story, I first made this the I was in culinary school back in 2015 with Chef William (Bill) Yosses (he’s been a White House chef as well). He told me to make it and I was stunned that how should I make it? He told me to think and make it. So I decided to roast the edamame and garlic for that depth of flavor and he loved it! It was such a sign of approval for me. This recipe has been a family favorite since! I love topping it with everything bagel seasoning for that crunch and flavor. It goes well on toast, chips, crackers, vegetables. This is also Vegan!

Servings: 8-10 servings

Prep Time: 15-30 mins

Roasting Time: 30 mins

Total Time: 1 hour

Ingredients: 

To roast:

  • 280-300g edamame 

  • 1 head garlic 

  • 1/4 tsp Salt 

  • 1/4 tsp Pepper

  • 1 tbsp Olive oil

    To Blend:

  • 2/3 cup Tahini 

  • Juice from 2 lemons

  • 1/4 cup fresh Parsley 

  • 2/3 cup extra virgin olive oil

  • 1/4 tsp Nutmeg 

  • Salt as per taste

  • 1/4 tsp Pepper

  • 1/4 tsp Sugar 

  • 1/2-1 tsp Chili flakes

  • 3/4-1.5 cups Hot water (not boiling) as needed

  • 2 tbsp Everything bagel seasoning to garnish; optional

  • 2 tbsp extra virgin olive oil to garnish; optional

Directions: 

  1. Preheat oven to 350F. Line a baking tray with parchment.

  2. Slice the top of the head of 1 garlic bulb. Wrap it with foil and place on the baking tray.

  3. Place the edamame around the garlic bulb.

  4. Drizzle salt, pepper and olive oil over them (including the garlic) and toss it to cover well.

  5. Roast in the oven for 10-12 mins and then take the edamame out. Flip the garlic bulb over so that the cut part is facing the baking tray and let it roast for another 20 mins till its browned and soft.

  6. Once out of the oven let it cool for 5-10 mins.

  7. In a food processor add the roasted edamame, roasted garlic cloves (not the skin), tahini, lemon juice, parsley, spices, olive oil and blend together. As needed add water, 1/4 cup at a time to get the consistency you like.

  8. Once blended to the consistency you like, transfer it to a bowl and top with olive oil and everything bagel seasoning.

  9. Serve with toasted bread, chips, vegetables, crackers.

Notes/Tips:

  • Use the best quality extra virgin olive oil to make all the difference!

  • Roasting the edamame and garlic adds a depth in flavor and makes it so much better.

  • Store it for 7-10 days in an airtight container in the fridge. Putting a thin layer of olive oil over it helps keep it fresher.

  • You can skip the everything bagel seasoning but its SO good with it.

  • Hot water helps to blend easily so use hot water when adding.
