Au Gratin Cups

Au gratin cups is a delicious cheesy vegetable gratin filling in phyllo cups. It is a delicious colorful appetizer that is so easy to make. It is perfect bite size treats great for get togethers. It’s a great starter for Holi since its so colorful and not to forget yummy. You can make the filling ahead of time and fill and bake them before serving. They aren’t very heavy which is an added bonus. Loved by kids and adults alike, these cups are a no brainer to make!

Servings: 15 - 18 phyllo cups

Prep Time: 20-30 mins

Cooking Time: 10 mins

Total Time: 40 mins

Ingredients: 

  • 1/2 cup white sauce - check notes

  • 1 cup mixed veggies- I used frozen mix or carrots, peas, green beans and corn, check notes

  • 1/2 small onion finely chopped

  • 1/3 cup mozzarella/amul/cheddar Cheese to sprinkle on top -optional

  • 1/2 tsp Mixed herbs

  • 1/2 tsp chilli flakes

  • 1 tsp Salt

  • 1/4 tsp pepper

  • 1/4 tsp sugar

  • 15-18 Phyllo cups - Check notes if you do not have phyllo cups and have phyllo sheets.

  • 1/4 cup Milk if needed

  • 1 tbsp olive oil

Directions: 

  1. In a pan add olive oil.

  2. Add onions and cook for 2-4 mins till it starts sweating.

  3. Add the mixed veggies and cook till they soften.

  4. Add seasonings- salt, pepper, sugar, Italian seasonings and chill flakes and mix it in.

  5. Add white sauce and mix it together. If it’s very thick add milk. You do not want very liquid, you want it thicker so it fits well in the cups and does make it very soggy.

  6. Let the mixture cool.

  7. Preheat oven to 325 F.

  8. Place phyllo cups in a cupcake tray. If you do not have phyllo cups click here to see how to make your own from phyllo sheets

  9. Fill with the vegetable filling to the top but not overflowing it.

  10. Sprinkle the top with cheese- optional.

  11. Bake at 325 F for 5-6 mins and broil for 3-5 mins if you want additional colour on the cheese.

  12. Serve warm with ketchup or a chilli sauce.

Notes/Tips:

  • You can make your own white sauce or use store bought alfredo sauce.

  • If you are using frozen veggies you can just rinse it under warm water. If you use fresh veggies slightly steam them (carrots,beans and peas) and then cook them as per the recipe.

  • You can add vegetables like potatoes, mushrooms, broccoli, zucchini etc. Make sure to cook the vegetables well.

  • Phyllo sheets- If you do not have phyllo cups, check this recipe video. I show how to make phyllo cups from phyllo sheets in it. If you use phyllo sheets, you need to brush it with oil, as per the recipe video and bake it at 375F for 8-10 mins till the phyllo is golden brown and cheese is bubbly.

  • Vegan- Use any vegan white sauce recipe, i have vegan options in my white sauce recipe.

  • If you make the filling too liquid it can make the cups too soggy.

  • You can add 1 tsp garlic powder if you want.
