Apple Caramel Cake

Apple caramel cake is a yummy super easy fall dessert recipe! A shortcut dessert that looks so fancy and is so warm and cozy. A butter loaf cake filled with cream cheese, the most delicious spiced caramelized apples topped with whipped cream and crushed praline. The flavors and textures just work together perfectly! You barely need to put in any work to make this dessert which will surprise you. Something to whip up if you have last minute guests or even when you have a lot to make or you know for one of those days you don’t want to be in the kitchen for a while.

Ingredients: 

  • 12 oz butter pound cake loaf

  • 2 oz cream cheese at room temperature

  • 1.5 honey crisp/gala apples cut in pieces

  • 4 tbsp sugar; divided

  • 1 large cinnamon stick

  • 1 tsp nutmeg powder; divided

  • 1 tbsp lemon juice

  • 2 tbsp chopped walnuts

  • 1/2-2/3 cup whipped cream

Directions: 

  1. Apple filling- Put a pan on medium heat. Add 2 tbsp of sugar and let it melt and starts to carmelize. DO NOT touch or stir it till it you see the caramel color. Add cinnamon stick and 1/2 tsp nutmeg powder and mix it together till all sugar is lightly caramelized. Remove the caramel stick once the caramel is ready. Add the chopped apples in the caramel and mix. Let it cook for 4-5 mins till the apples get soft. Once the apples are soft and cooked through, add lemon juice and mix. Cook for 1-2 mins and then keep it aside to cool slighty.

  2. Praline- On a pan on medium heat add 2 tbsp of sugar and let it melt and starts to caramelize. DO NOT touch or stir it till it you see the caramel color. Add 1/2 tsp nutmeg powder and mix it together till all sugar is lightly caramelized. Add walnuts and mix in. Let the caramel come to a medium amber color. Pour it on a steel plate or silicone mat and let it cool. Once its completely hardens Crush it into small pieces.

  3. Scoop out the middle of the pound cake. Don’t go all the way to the base though.

  4. Spread cream cheese around the sides of the hollowed out part of the cake.

  5. Fill with the cooled apple filling.

  6. Top it with whipped cream and spread.

  7. Garnish with the crushed praline pieces.

  8. Let it chill in the fridge for 1-2 hours.

  9. Cut and serve!

Notes/Tips:

  • You can use store bought loaf cake or make your own.

  • You can use heavy cream and whip it with sugar to make whipped cream or use bottled whipped cream or cool whip.

  • You can make the apple filling from a day before and keep.

  • Be careful while making caramel. Caramel burns are the worst, trust me!

  • Don’t skip the cream cheese, it adds a lot of flavor.

  • Vegan- To make this vegan, use vegan loaf cake and vegan whipped cream.
