Ingredients: 

For aloo chaat:

  • 3 medium golden potatoes boiled and mashed; about 1.5 cups

  • 1/2 tsp salt as per taste

  • 1/2-1 tsp chaat masala as per taste

  • 1/2 tsp sugar

  • 1/2 tsp black salt

  • 1/2 tsp cumin powder

  • 1/4 tsp red chili powder

  • 3-4 tbsp red onions finely chopped

  • About 3-5 tbsp coriander chutney; as per taste; I used homemade click here for the recipe

  • about 1/2 cup tamarind chutney; as per taste

To assemble the chaat trees:

  • 1/2 cup chopped coriander leaves

  • 1 cup sev

  • 3/4 cup pomegranate seeds

  • 18-22 Ritz crackers/Monaco biscuits

Directions: 

  1. Aloo chaat mixture: In a mixing bowl add all the ingredients for the aloo chaat mixture- mashed potatoes, salt, sugar, black salt, chaat masala, cumin powder, red chili powder, onions, coriander chutney, and tamarind chutney. Mix well till combined properly. It should be a light green color.

  2. Assemble the chaat trees: On a plate mix coriander leaves and sev. Keep it aside.

  3. Divide the aloo chaat mixture into about 18-22 divisions. Shape each division into a tree shape, it should be rounded on one end and pointed at the other.

  4. Roll each division in the coriander sev mixture coating it well.

  5. Use some chutney to stick it onto a cracker.

  6. Put some pomegranate seeds onto the tree. I like to spread it evenly over the tree.

  7. I used toothpicks with stars on them to add on top to give it a finished look. You can put a pomegranate seed on top instead.

  8. Serve & enjoy!

Notes/Tips:

  • You can make the potato topping from before and keep it in the fridge. Bring it to room temperature before shaping and assembling.

  • These stay crispy for 20-30 mins (without adding yogurt)

  • Make sure the potatoes are boiled well so they mash easily.

  • Using chutney to stick it to the cracker is a must!

  • Ideally, use homemade coriander chutney. It gives a fresh green color to the aloo chaat mixture which increases the look of the tree.
